This dish couldn't be simpler.

My son and I are fans of Mexican food, although we tend to stick to the less adventurous dishes such as tacos, burritos and taco salad (I know, I know – not truly Mexican!) Although we enjoy Mexican dishes, they aren’t something I make that regularly. My parents do not like spicy food at all, so when I decided to give Salsa Chicken a whirl, I definitely kept that in mind.
I’m sure there are many similar variations of this floating around online. I don’t know where to give credit because I can’t remember exactly where this one came from… Oops…
I have made something similar before, and that time it was baked in the oven rather than slow-cooked. Today I wanted to use the slow cooker, and I was really pleased with the results.
This could hardly be easier to prepare - just layer the ingredients in the slow cooker and turn it on! Love that on a busy day.
Slow Cooker Salsa Chicken
Chicken, salsa, corn, beans and cheese. A quick and easy Mexican-inspired dish that's ready when you get home.
6 – 12 chicken thighs (if spice isn’t an issue, you could sprinkle them with some taco seasoning, or perhaps some pepper or cumin)
1 jar President’s Choice Chunky Salsa (we like Mild, but feel to use Medium or Hot if your family prefers that)
1 19 oz. can black beans, rinsed
1 – 1 ½ cups frozen sweet corn
1-2 cups shredded cheddar cheese
Pour half the jar of salsa in the bottom of your crockpot insert. Place the chicken thighs on top and then add the rinsed black beans and corn. (I didn’t bother thawing the corn before adding it). Top with the remaining salsa.
Cover and cook on low for 5-6 hours. During the last half hour of cooking, sprinkle the cheese on top. It will be nice and melted when it’s time to serve the meal.
Serving Suggestions
I served this over white rice for my son and I, along with a side of steamed cauliflower. This would also be good in corn or flour tortillas. If I’d had any cilantro on hand, I think that would have made a tasty garnish. A salad would also make a good side.
I was thinking that this would be super yummy over nachos… Hmmm…. I’ll have to see how much we had left over... (We were serving an extra teenage boy tonight, so you just never know.) I love when you can use leftovers to make a whole new dish.
Verdict
Another tasty chicken dish utilizing my handy, dandy slow cooker. The chicken was very moist and tender (love you slow cooker!), and the chunky salsa, beans and corn gave the dish a nice texture. Dad wrote, "Great flavour!" My son thought it was really good as well, and I would definitely make this one again.
