Christmas marmalade

A quick and easy last minute Christmas gift


I love to give homemade gifts at Christmas time, and it's nice to make a decent-sized batch of something. Jam is one of my favourite things to make and to give and is usually well-received by everyone. My cousin, Debby, first introduced me to this delicious spread in her cookbook, "Cooking WIth Memories". It's amazing on anything you like jam on! The maraschino cherries make it look especially festive.


Christmas Marmalade


Oranges, lemons, maraschino cherries and ginger - so festive and pretty!

Note: I have not been able to find preserved ginger in any stores around here, so last year I made my own. It was a bit of work, but the results were very tasty. Here is the recipe I tried: Homemade Stem Ginger.


This year I was short on time, so I just used crystallized ginger (roughly 1/4 cup per batch) and omitted any syrup because I didn't have any. The marmalade was quite thick, but still yummy. The ginger flavour was very subtle.


I also used a food processor to chop the oranges, lemons and cherries, rather than slicing them thinly. That didn't impact the taste at all and the marmalade is still a lovely colour and texture.


Verdict

A sweet treat perfect for spreading on toast, scones or fresh bread.
