Cowboy caviar

A crowd-pleasing appetizer


Recently I attended a meeting with some ladies who had some dietary restrictions - no chocolate, no dairy, no peanuts. Everyone was bringing a snack and it was a little challenging to come up with something that met those requirements. Everything I wanted to bring involved cheese or sour cream or yogurt... And none of those were going to work. (I admit to a weakness for dairy in appetizers!) I was flipping through one of my recipe binders for ideas and came across this recipe for Cowboy Caviar.


I'm sure you can find a dozen different recipes online with just as many names, but I first had this Cowboy Caviar at a work potluck and loved it. Since then I have served it at several family functions, and it's amazing how many people like it, even kids. I find that a bit funny because, beans and peppers, but it is so colourful and pretty, plus it's served with nacho chips, so what's not to like?


Cowboy Caviar


Lentils, black beans, corn, cilantro, sweet peppers and celery served with nacho scoopers.

In a medium pot, mix together and bring to a boil, stirring until the sugar dissolves:


  • 1/2 cup olive oil

  • 1/2 cup sugar

  • 3/4 cup apple cider vinegar

  • 1 tbsp water

  • salt and pepper


Cool mixture 20 - 25 minutes.


In a large bowl, mix together the following:


  • Fresh cilantro to taste

  • 1 cup chopped green onion

  • 1 cup chopped peppers (red, yellow, orange or green or a mixture)

  • 1 cup chopped celery (I forgot to include this when I made it this time!)

Drain and rinse and add to the mixture in the bowl:

  • 1 large can black beans

  • 1 large can lentils

  • 1 small can of niblet corn

Once the juice has cooled down, mix it with the vegetables and legumes.  There will be a lot of juice that you will want to drain off when you serve it.  This will keep in the fridge for about 3 weeks.  Serve with nacho scoopers or chips.


Verdict

It never fails that I am asked for this recipe anytime I bring it anywhere. Enjoy at your next potluck or get together!
