Cozy Cottage Meal Plan Week 1 - 2020

I was off work this week, and that meant a bit of a break from much cooking as well. We tried to keep things simple although I still can't believe how busy the holidays always are. If I'm honest, another week off would be just lovely!


Welcome, 2020. I am amazed that yet another decade has come and gone. I wish you all a year full of good things and wonderful meals with family and friends!



On the menu December 29, 2019 - January 4, 2020:




Tonight I helped host a Christmas party and we served pretzel buns topped with smoked salmon and a dollop of horseradish. The linked recipe is heartier and would make a good meal. We also served veggies and dip, Emmental cheese with green grapes, cheese and crackers, vegetable pizza and pretzel buns topped with smoked ham, a slice of hard-boiled egg and a German pickle. I brought along an assortment of Christmas cookies, but for future reference, no one really wanted them. I think everyone was kind of sick of sweets. I find it funny how that happens!

After a busy weekend, I didn't feel like cooking and wanted a really light supper! This is what I like to call a "snacky" supper. It really hit the spot tonight.



Tuesday (New Year's Eve) Raclette Dinner


This is now our New Year's Eve tradition, and tonight we cooked it with several friends. It's always delicious (and I always eat way too many potatoes!) Kitchen Kuttings in Elmira sells Raclette cheese now. Although you can find it at Zehrs, it's much cheaper to buy a big block from a cheese store. We served steak and chicken along with an assortment of veggies, baguette and of course, baked potatoes. I like a little summer sausage cooked along with my cheese as well. The heat draws out the saltiness - sooo good!




Wednesday (New Year's Day) Roasted Chicken Noodle Soup with fresh buns and cheese (using homemade Chicken Stock)


The chicken from Trick's Creek Farm that we had on Christmas Day was so good that I just had to make homemade chicken broth with the bones. I actually made it that night after supper and froze it until I was ready to use it today. I love this broth recipe from one of my all-time favourite cookbooks, "Anne's Favourites". I almost never have parsnips on hand, but I had everything else, for once.


The resulting Roasted Chicken Noodle Soup never fails to disappoint. It is serious comfort food, maybe because of the abundance of carbs (it uses both egg noodles and potatoes.) I cut back on the number of potatoes and usually only use 2 cups which is still plenty. I added the last of a bag of frozen corn and some frozen peas for colour. I've never met anyone who didn't enjoy this soup.

Tonight's dinner featured just whatever veggies I had on hand - a bunch of red onion left over from New Year's Eve, a carrot, a zucchini, some cherry tomatoes that were getting soft, and the last of a package of mushrooms. I made our favourite Crispy Potatoes on the side (with a bit less olive oil than called for) and I used boneless pork cutlets that I found on sale - bonus! - topped with the Greek rub in the recipe above. So good and so fast!

Friday Beef Goulash with green salad


I "cheated" tonight and used a package of Knorr Goulash seasoning and some leftover meat from our Raclette Dinner earlier in the week to make my goulash, but the linked recipe sounds totally amazing! We served ours over leftover Crispy Potatoes from last night but it would be equally good over rice or noodles.

Today I hosted some of my favourite friends for our annual Christmas get-together brunch. Clearly I need to get back in the photography habit, but these recipes were hits. My friends also brought some delicious dishes that I plan to share with you soon.
