Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

Pizza-stuffed chicken roll ups, beef tacos with black beans, tomato, leek and spinach soup with dill and slow cooker golombki.

According to my mom, tonight's supper was "a keeper" and she couldn't stop raving about it. The chicken was a little fussy to make, but super delicious - it's from Gina Homolka's "Skinnytaste Fast and Slow" cookbook. This is very kid-friendly and easy to modify for picky eaters - just leave off any toppings or fillings they don't like. If you'd like to keep things simple, you could totally just flatten and bread the chicken and then top it with the first amount of cheese, pepperoni and mushrooms. After the chicken is nearly cooked (per the recipe), then I would top it with more cheese, the marinara sauce, red onion and green pepper. (My chicken breasts weren't very big, so I ended up using 4 instead of just 2. The first one was cut in half, and I put the first set of toppings on one half, and then put the other half on top of that and coated and breaded the whole thing as directed. After baking, I added the remaining toppings. This worked perfectly, too.) This noodle side dish was delicious as well. I purchased a Dole "Chop Chop" Italienne salad kit (not pictured) and it was a great accompaniment to this meal. Happy Monday!

Wednesday Taco Mix with Black Beans with flour tortillas and taco toppings


My son had a friend over, so I thought it would be a good night to serve tacos. Teenage boys tend to have big appetites! They both thought they could eat three tacos, but this recipe is filling, so they stopped at two (plus the wraps were huge). I usually like to use my slow cooker on Wednesdays, but instead today I cooked the meat and beans ahead and just kept it warm in a casserole dish in the oven. We prefer flour tortillas to corn tortillas, but either would be good with this filling. Our favorite taco toppings include diced tomatoes, grated cheddar cheese, iceberg lettuce, chopped avocado or homemade guacamole, salsa and sour cream.





Thursday Tomato, Leek and Spinach Soup with Dill and cheese and crackers


This recipe has been in my "archives" for many years but I first made it in 2002. My son learned to love tomatoes sitting on his grandfather's knee. He would go over to visit and see his grandfather eating one of his favourite breakfasts - a bowl of canned tomatoes served with old cheddar cheese and a side of toast. He has always been a very visual eater, so of course, he would have to try some, too. It soon became one of his favourites as well. Since this soup has a lovely tomato base, it was one I served often. I always double the amount of spinach to 4 cups, and I use baby spinach and never bother to shred it. I love how quick, healthy and tasty this soup is. (Tonight my son ate 3 bowls full!) Don't skip the cheese on top.

Saturday Slow Cooker Golombki with green salad


This isn't the first recipe I've tried in my search for a casserole that tastes just like cabbage rolls without the work, but it may be my last! This was super and in my opinion, does indeed taste exactly like cabbage rolls. I love the ease of prep using the slow cooker, and the fact that you can just slice the cabbage instead of shredding or grating it. I had some savoy cabbage in the fridge so that's what I used today. There is a perfect ratio of rice to ground beef and you can taste some of the flavour of the tomato soup, but it's richer because of the meatless spaghetti sauce (I used a jar of Classico Tomato Basil Marinara). This recipe is enough to serve a crowd (our family of 3 barely put a dent in it!), but I don't think anyone will complain about the leftovers.
