I managed to get back to the woods last weekend and was thrilled to see that the snow didn't harm the Round-lobed Hepaticas in the slightest. This seems to be a banner year for them (or else I happened to be there at their peak). They are prolific and totally gorgeous. I especially love their soft mauve colour.

Sunday Roast Leg of Lamb with roasted potatoes and carrots
We celebrated Easter today with a bit of a splurge - a roast leg of lamb. Sometimes lamb can smell very strong when it's cooked, but the garlic in this recipe definitely overpowered the lamb and made the house smell amazing. Traditionally we have gone out for Easter brunch, but this year we opted to stay home. I haven't actually cooked Easter dinner in a long time and lamb was a first for me. This recipe was simple and the results were amazing - a very tender, perfectly cooked leg of lamb. (Sorry, no photos!) If you're looking for a great lamb recipe, I highly recommend this one.
Monday Leftovers / eat out / takeout
I served leftover lamb in gravy with fried potatoes and a vegetable for supper tonight. Quick, easy and tasty.

Tuesday Potage Cultivateur
I still had the ingredients for this soup in the fridge (turnip, carrots, celery, cabbage and a leek), and I was very happy to use them up tonight. I just love this soup and in fact, it may be one of my all-time favourites. I didn't have any Gruyere cheese, but I did have some sliced Swiss cheese so I just diced that up and topped the soup with it. Delicious.

This week we tried another vegetarian option from Greta Podleski's "Yum & Yummer" cookbook. If I'm being honest, I have never eaten tofu before. Clearly I should have watched Greta's video first, because I definitely cut my tofu too small. I also used an entire 375 g package of noodles which was too many, and I forgot the sesame seeds. In spite of all of that, this dish was good, but we found the flavour quite mild. I imagine that if we'd had less noodles it would have been better and more flavourful. I also found that a little salt enhanced the taste although none was called for in the recipe. Still, it was good and surprisingly filling. I would make this again but use fewer noodles!
Thursday Leftovers / eat out / takeout
Tonight was crazy busy and I just didn't feel like cooking which doesn't happen very often, frankly. I picked up a rotisserie chicken from the grocery store deli along with large box of potato wedges and a Greek salad. I have a plan for the leftover chicken for next week - something my son has been asking for regularly but I have yet to make.

Friday Cauli "flour" Crusted Quiche with Spinach & Mushrooms with green salad
Last week some of our breakfasts and lunches were a little carb-heavy, so I opted for something lighter tonight for supper. This quiche was delicious! I used Emmental cheese instead of Swiss and it was great, (I'm sure it helped that they are similar in flavour, although, really, how can you go wrong with any cheese?) Admittedly, mine was a little more brown than "golden", but it didn't taste overdone at all. This is a fantastic carb-less option if you're doing Paleo or Keto or just trying to eat fewer carbs and is also meatless. The leftovers were great for a quick breakfast the next morning. This recipe is also from "Yum & Yummer". Honestly, I haven't made anything from her cookbook yet that we haven't enjoyed, and there are so many great recipes to choose from!
