Sunday Pesto Pizza and Caesar salad
I've been in the mood for pizza a lot lately! I added additional toppings to this pizza (like green olives) and some different cheese. Honestly, when cheese is involved, it's pretty hard to go wrong!
Monday Mucho Yummy Beef Bowlrito
This may be our new favourite Mexican dish. I know I've been making a lot of dishes from Greta Podleski's "Yum & Yummer" cookbook lately, but as I mentioned in last week's post, they are always delicious! We totally loved this, and it was great to use up some more cilantro from last week's Peanutty Sesame Noodle Bowl with Crispy Tofu & Veggies in my homemade guacamole. We topped our bowls with homemade salsa and guacamole, shredded cheese, sour cream, chopped tomatoes (not pictured), corn and black beans. So, so yummy!!

Wednesday Chinese Fried Rice
My son has been requesting this recipe for a few weeks. It's a great one for using up leftover chicken - a little goes a long way! It is also easily adaptable to what you have on hand - more or less chicken, an extra egg, mushrooms, you name it. I added some finely chopped mushrooms tonight and used the entire bag of bean sprouts. I hate to waste them, but never really know what to do with a partial bag. I should mention that lately I have had a terrible time finding decent bean sprouts. I visited multiple grocery stores but the ones they had in stock were always "squishy". When my son and my mom managed to find these (apparently my son was testing their firmness in the store by squeezing one in the bag! lol), I thought I better not waste any time and get this made. It was delicious. I should also mention that we do not love this as leftovers. We find it's best eaten the day you make it.
Thursday Sausages with Fruity Slaw with sweet potatoes and carrots
I was in the mood for honey garlic sausage tonight plus I had some coleslaw mix to use up. This would be equally good with mashed potatoes instead of sweet potatoes. Quick, easy and delicious - my favourite kind of recipe!
Friday Less-On-Ya Lasagna with Caesar salad
Tonight's recipe was chosen out of a need to use up a container of cottage cheese before it expired and a desire to make something meatless. We really like lasagne around here, so this seemed like a good choice. I loved all of the veggies in it and we (at least the adults!) thought it was really good. Sidebar: my teenage son had zero interest in trying this as he is not a fan of zucchini. This recipe comes from "The Looneyspoons Collection" cookbook by Janet & Greta Podleski.
Saturday Leftovers / eat out / takeout
The Less-On-Ya Lasagna made 8 generous servings, so there was enough left over that no cooking was required on Saturday. Bonus!
