Sunday Roast beef dinner with oven roasted potatoes, carrots, gravy and coleslaw
It's been a while since we had a roast of beef so it seemed like the perfect choice for this Sunday's supper. I put a roast (we like eye of the round) in a roasting pan with about 1 1/2 inches of water in the bottom and a beef bouillon cube. To that I add two peeled, whole onions. Then I roast it at 325 F, covered, for 3 hours. After 1 1/2 hours, I add washed potatoes and peeled whole carrots to the roasting pan. Then I use the drippings to make gravy. Always a family favourite.

Tuesday Leftover Roast Beef Stroganoff with egg noodles and broccoli
This is the best recipe I know for using up leftover roast beef. In fact, I purposely buy a large roast just so we have leftovers to make this. This recipe never fails to please and comes together quickly. Don't skip the sour cream!
Wednesday Beets & Sweets Buddha Bowls
"Meatless Wednesday" is now part of our weekly meal plan, so this week I made these amazing Buddha Bowls again. They come from Greta Podleski's "Yum & Yummer" cookbook and are just so darn pretty, not to mention filling and delicious! This time I added blueberries to the top (not pictured) and they were a lovely addition. This is definitely one of my favourite meatless meals to date. We had lots of dressing left over for some reason, and I am looking forward to trying it on another salad, maybe something with spinach and fruit. Note: This recipe as written serves 2, so if you're serving more people you will want to increase the ingredients accordingly.
Thursday Honey-Mustard Chicken Bake
It was just my mom and I tonight for supper, so I didn't bother making any carbs for us. We just enjoyed this tasty Honey-Mustard Chicken Bake as pictured. Wild rice or brown rice would have been good with this, though. My chicken thighs were fairly small so I used 8 and there was plenty of sauce for all of them. We enjoyed this mix of veggies, too, although I found the red pepper a little strong tonight. It was nice to have supper in the oven and roasting while I cleaned up the kitchen. After dinner, it took very little effort to finish up. Love that! There was definitely enough liquid after cooking that I think you could puree this meal for someone with dysphagia.
Friday Sausage and Leek Soup with green salad
There's just something about leeks that say "spring" to me, so I try to use them regularly this time of year. Sadly, the weather hasn't felt that spring-like, so it seemed like a good night for some soup. This remains one of our favourites any time of year.
