Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

Chicken divan, the best buttermilk pancakes, beef & italian sausage bolognese, chicken, tomato & cucumber salad and egg roll in a bowl.

I am super late with this week's post. It's been crazy busy around here lately and I have been spending as much time as possible outside after work. The warblers are migrating and this has been a banner year for sightings in the yard! I have added several firsts to my lifelong bird list. My Nana would be proud!


Sunday Mother's Day - eat out/takeout


My son wanted to go shopping today, and it was a great opportunity to spend some time together. He isn't often in the mood to shop, so I have to enjoy it when he is! For supper we brought home Chinese food from our favourite restaurant, Tien Lee, in Elmira. Apparently a lot of other people had the same idea because it was super busy!


Monday Chicken Divan, Lightened Up with brown rice.


I failed to get a good photo of this dish again, but trust me, it tastes delicious and looks pretty, too. This is a super way to use up leftover roast chicken, whether it's one you cooked at home, or a purchased rotisserie chicken.


Tuesday The Ultimate Buttermilk Pancakes with sausage and fruit salad


Pancakes have been requested in this house daily for more than a week, so I thought tonight might be a good night to serve them. I didn't have any buttermilk so I made my own with regular milk and lemon juice. They turned out flatter than usual, but are always yummy. I may have mentioned I am constantly trying new recipes, even for things that I make regularly, but this pancake recipe never changes!

Wednesday Beef & Italian Sausage Bolognese with spaghetti and green salad


This may be the best Bolognese recipe I've made to date. It even had zucchini in it, which my son detests, and he still asked to take it for lunch the next day. NOTE: I grated the zucchini as opposed to chopping it up. I find it "disappears" much more easily that way. We loved the flavour combination of beef and Italian sausage. This recipe made enough for 2 meals for 4 people. Super! From Greta Podleski's "Yum & Yummer" - slowly but surely I am cooking my way through her cookbook. I love it!


Beef & Italian Sausage Bolognese


I've been buying rotisserie chicken lately for wraps for my son's school lunches, but this week we had other leftovers that he was happy to take, so it didn't all get used. As the weather gets warmer, I start thinking about lighter meals like salads and they're a great way to use up leftover protein like that. Tonight we had a yummy twist on a Greek salad with chicken. One of my favourites, I make this recipe often in the summer. I like to add some sweet pepper to the plate, along with the tomatoes and cucumbers. Although the recipe has you cook chicken from raw, you can easily replace it with store-bought rotisserie chicken, leftover cooked chicken or even deli cold meat like turkey.


Chicken, Tomato and Cucumber Salad


Since my son was working tonight, it seemed like a good chance to serve pork as he doesn't like it. This recipe is from "Skinnytaste Fast and Slow" by Gina Homolka which I highly recommend; however, I found it online at the above link. So good and quick to prepare. Note: I didn't cook the green beans in the oven since I wasn't feeling "charred" tonight.

Saturday Beef and Cabbage Stiry Fry (or as we like to call it, Egg Roll in a Bowl) with rice


I had planned to eat out tonight, but our plans changed, so I needed to come up with something quick and easy that used ingredients I had on hand. Enter this favourite, Egg Roll in a Bowl. Always quick and always delicious.
