Fruity spinach salad, pesto zucchini noodles with chicken provolone-topped burgers with beet & arugula salad, bbq pork tenderloin, kale, tomato & pancetta pasta, steak with killer baked potato topping.

Sunday Spinach, Strawberry and Avocado Salad with chicken salad and croissants
We had guests for lunch today, and I wanted to serve something light and delicious. I served this salad without the chicken as pictured, but I do love it all together. (Check out Sensational Spinach Salad from Greta Podleski's "Yum & Yummer". Instead I served a simple chicken salad (mayonnaise, chopped chicken, diced celery and some dried parsley) on croissants along with this beautiful Spinach, Strawberry and Avocado Salad on the side - perfect for company. Everyone really enjoyed it. Win, win!

Monday Pesto Zucchini Noodles with Chicken with green salad
There was a lot of pizza on the menu this weekend (in between chicken and salad), so I wanted something light and carb-free. This fit the bill and was delicious! Quick and easy and so good. I think some cherry tomatoes and freshly grated Parmesan would be a nice addition. I used leftover rotisserie chicken but you could easily bake or fry some chicken instead.
As I mentioned, our Goodfood subscription food service order arrived last Friday, so tonight we tried the burgers. They were very good, but the Arugula-Yellow Beet Salad was stellar. I didn't take any photos (too hungry!) but I would highly recommend this option. If you're looking for a recipe, this one from Curtis Stone looked good, too Burgers with Red Onion Marmalade.
Wednesday BBQ Pork Tenderloin with salad
This BBQ Pork Tenderloin is fast and tasty. I wasn't feeling leftovers tonight, so I made this instead. Take a frozen pork tenderloin (about a pound) and cover it with Diana Sauce - the Gourmet Rib & Chicken flavour, or any flavour will do. Bake in the oven at 375 F for about two hours, along with some potatoes in a separate dish if you like. We skipped those tonight and just had a big salad.

Tonight I made the final recipe from our Goodfood box. I would never have thought of using kale with pasta like this, but it was super. This recipe came together very quickly and I loved the fresh pasta. The herb mix was a little peppery or spicy or something, but it was tasty. We added a little extra Parmesan cheese, because cheese... Here's a similar recipe from Cooking Light for Kale, Tomato and Pancetta Pasta.

Saturday Steak with Killer Baked Potato Topping, sauteed mushrooms, asparagus and Italienne chopped salad
We haven't had steak in too long. Since we don't have a barbecue, I always follow these directions: How to Cook a Perfect Steak Indoors. I like to top them with some Keg steak spice or just some salt and pepper, olive oil and garlic powder. So good! I always serve baked potatoes with my Killer Baked Potato Topping and I also roasted some asparagus tonight.
