Cozy Cottage Meal Plan Week 39 - 2019

Chinese fried rice, greek turkey burgers, chicken parmesan, quinoa stuffed peppers, and apple spinach salad.

September continues to be crazy busy so I am keeping the meals simple and easy.

On the menu September 22 - 27, 2019:



This recipe is a great way to use up odds and ends in the fridge like leftover rice, chicken, pork, beef or shrimp and veggies such as mushrooms, carrots or celery. Feel free to use what you have on hand. We like to use finely chopped mushrooms and the entire bag of bean sprouts in addition to carrots, peas and onions. We do not like this as leftovers - it is best eaten the day you make it. Totally delicious and a great way to stretch your food dollar.

Monday Tasty Greek Turkey Burgers with Tzatziki and Greek Salad


This is one of our favourite "get it on the table quick!" weeknight meals. It's also a fantastic way to use up the pile of fresh tomatoes and cucumbers I seem to have on hand right now. As always, I used Hayter's Onion & Parsley Turkey Burgers instead of making my own and served them with the delicious Greek Salad and Tzatziki from the link above.

Tuesday Chicken Parmesan with spaghetti, zucchini noodles and green salad

I love Chicken Parmesan and it's been way too long since I made it. This recipe is simple because you bake the chicken breasts in the oven - no frying required! The linked recipe seems to be missing instructions for cooking the marinara sauce, but I always combine the ingredients in a small saucepan and cook for at least 20 minutes without a lid. This marinara recipe doesn't have any sugar in it, so you might want to add a pinch if you like it a little sweeter. I like cooking zucchini noodles on the side to keep up my veggie intake. That way I feel fuller and satisfied with just a little pasta. My son was pretty excited to learn that I had made this tonight. He loves pasta and this is one of his favourite ways to eat chicken.

Wednesday Quinoa Stuffed Peppers with garden salad


I know Meatless Monday is a thing, but around here, it's Meatless Wednesday. Since my son was working I thought it was a good opportunity to make these Quinoa Stuffed Peppers from the Skinnytaste cookbook. These were good and very budget-friendly. I know quinoa can be expensive, but it costs less than meat and in this recipe, a little goes a long way. They were also surprisingly filling and perfect for the vegetarians in your life.

Thursday Roasted Vegetable & Sausage Bake with kale slaw


This recipe is a great way to use up any odd veggies hanging around in the fridge. Pretty much anything goes as long as it can be roasted. Tonight I used celery, carrots, beets, sweet potatoes, potatoes, onion and mushrooms along with honey garlic turkey sausages and an apple. I love the combination of apple with sweet potatoes, carrots, and beets especially. This takes about an hour and once you have all the veggies peeled and cut up, you just put them in the oven, adding the sausages halfway through. A package of kale slaw goes really well with this and also has minimal prep!


Roasted Vegetable & Sausage Bake

Sometimes I just don't feel like making more than a salad, and tonight was that night. This is one of my favourite salads because it's so pretty and so yummy! I love fruit in a salad and the candied almonds take it over the top. This pairs well with just about any meat, but especially chicken, fish or honey garlic sausage. It was great with leftovers from last night.
