Cozy Cottage Meal Plan Week 4 - 2019

Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

Roast beef stroganoff, slow cooker dijon chicken, chili con carne, slow cooker ricotta and spinach manicotti and skillet fish fillet with tomatoes, white wine and capers.

Winter has arrived in full force around here, complete with snowing, blowing and Arctic wind chill levels, and there's more on the horizon. I have been freezing, it feels like, for about a week straight. That means more cozy meals that warm your insides. What can I say? They make me happy.

On the menu - January 14 - 20, 2019:

Sunday Leftover Roast Beef Stroganoff with egg noodles, broccoli and green salad


I know I have shared a beef stroganoff recipe here before, but as I mentioned, that one is nowhere near as good as this one, at least in my family's opinion. This one is "most requested" anytime there is leftover roast beef in the house and I was thanked more than once for serving this tonight. It uses ingredients I (mostly) always have on hand and comes together in a flash. Comfort food at its finest.



Monday Slow Cooker Creamy Mushroom Chicken Stew with fresh buns and coleslaw


The actual recipe I made tonight is called Slow Cooker Dijon Chicken and comes from Chef Michael Smith's cookbook, "Real Food, Real Good". I got his cookbook a while ago, but this is only the second recipe I've made from it. Since I don't have permission to share his recipe, the link above comes close.


Slow Cooker Dijon Chicken was tasty and different, with wine, whipping cream and Dijon mustard to flavor it. My veggies could have been a little more tender (I cooked this for 6 hours on low), but the chicken was falling off the bone. The tarragon had a mild licorice flavor which was something new for us. I enjoyed this, and so did my parents.



Tuesday Winona's Famous Chili Con Carne with rice, tortilla chips, cheese and green salad

I had friends over for supper tonight and chili was on the menu. I love how fast this comes together, and that I can cook it long and slow in the slow cooker or more quickly on the stovetop. Either way it always receives rave reviews. This is good served with rice, especially if you like it a bit spicy. I also love to top it with avocado, tortilla chips and grated cheese.

Thursday leftover Winona's Famous Chili Con Carne with baked potatoes and green salad


I thought I'd try something a little different tonight and top some baked potatoes with leftover chili con carne. This stretched the chili and also made it different from the way I served it on Tuesday. We liked it.


Friday Slow Cooker Spinach and Ricotta Manicotti with green salad and zoodles


This time I added some cooked ground turkey to the sauce before putting the manicotti in the slow cooker, and I also added a second bottle of passata and half again as much pesto, garlic powder and garlic. Once again I cooked fresh spinach until it wilted and then cut it up using some scissors. Delicious!



Saturday Skillet Fish Fillet with Tomatoes, White Wine and Capers with roasted potatoes, broccoli and green salad


This was another tasty way to serve fish. I used sole and it cooked really quickly and was very moist and mild (and so were the capers, surprisingly). This wasn't salty even though I used canned tomatoes that were not salt-free. Dad gave me two thumbs up for this one.
