
Greek marinated pork tenderloin, Greek stuffed peppers, turkey taco rice skillet and make ahead lasagna
I think I love fall most of all. I found these sweet little mushrooms in the woods, and the colourful leaves on the trees just make my heart happy. What a beautiful season.



In the kitchen, I'm back to making what I consider comfort foods, but still keeping things simple. Enjoy!

Tuesday Greek Marinated Pork Tenderloin
I really like this pork tenderloin, although I used less salt in the marinade than the recipe calls for. I know the grated cucumber seems like an odd marinade ingredient, but trust me, it works. I marinated the pork about 8 hours and cooked it for almost an hour (we like our pork well done). The Greek salad was a perfect accompaniment.

These stuffed peppers are one of my favourite vegetarian dishes. They are amazing! I know we just had Greek last night, but I was just in the mood. Your whole family is going to love these.

Friday Turkey Taco Rice Skillet
This!! Quick, tasty and uses everyday ingredients... What's not to love? We ate this topped with all of our favourite taco toppings - shredded lettuce, chopped tomatoes, diced avocado, and sour cream, but as the author writes, it would be great inside a flour tortilla as a burrito filling, or nacho topping. So versatile and simply delicious.

Saturday Make Ahead Lasagna with Caesar salad and garlic bread
This lasagna was really tasty, but honestly, I think my family prefers my version (see Week 6 - 2020 for the recipe). If you like sausage and a basic lasagna (with no added veggies), this will be a hit, though. I used a combination of Italian sausage and ground beef from Trick's Creek Farm. We found the lasagna a little on the dry side (likely because it was made ahead), but it had very good flavour and went really well with the Caesar salad and garlic bread. The make-ahead aspect was awesome, though, and I plan to try that with my own recipe.
