Cozy Cottage Meal Plan Week 43 - 2019

Sticky beef strips over ginger fried rice, tater tot casserole, potato soup, pan-roasted chicken breasts, english muffin pizzas and perogies.

We had our first frost over the weekend. The trees are really starting to change colour now. The mornings especially are just so gorgeous with all the red and gold leaves and then the glint of sunshine through the trees. Love!


We also had a cute visitor in the yard this week, although I am not a fan. This very large raccoon was ambling around in the middle of the day and was not one little bit deterred by the presence of a big and loudly barking St. Bernard! Thankfully he eventually left, but I will be watching out for him.






On the menu October 20 - 26, 2019:



This was another meal from Good Food. I kind of messed up this past week when I ordered it, and chose only 2 servings instead of 4. We were able to stretch some meals to feed 4, but not all. This was one that we weren't able to. My son really enjoyed this. I thought it was good, but it wasn't one of my favourites.

Monday Tater Tot Casserole with coleslaw


I haven't made this in forever, but it is really good when you want something quick and easy (and not the healthiest!) I don't make it exactly as the recipe describes. Instead, I use 2 pounds of extra lean ground beef. Once that's cooked, I add the soup mixture and the frozen vegetables. I cook and stir for a couple of minutes and then pour that into a greased 9x13" casserole dish. I top that with shredded cheddar cheese and finally I spread the Tater Tots over top. Bake at 350 F for one hour or until hot and bubbly.

I totally love this soup. It's one I've been making for years, and whenever I need something extra comforting or simple using ingredients I have on hand, I pull this recipe out. You won't be disappointed if you give it a try and I can pretty much guarantee your whole family will love it.

Family Favourite Potato Soup


I may have mentioned that I messed up last time I ordered from Good Food and I only got 2 servings instead of 4. Happily, this recipe was easy to stretch by adding 2 extra chicken breasts and some additional potatoes. The spice mix this time was a simple Herbes de Provence which you can find at Loblaws stores. This recipe was very good and we enjoyed it. The salad was also super simple but yummy - slivers of carrot over romaine with a balsamic vinaigrette. A Good Food subscription is definitely cheaper than eating out, and I plan to use it once or twice a month as a special treat for our family.

Thursday Fast English Muffin Pizzas with green salad


Sometimes you just need something fast and easy. I didn't feel like driving to get pizza tonight, so I made these. We added chopped mushrooms and tomatoes to our pepperoni. The one on the left has a basil pesto base topped with black olives and chopped tomatoes. It doesn't get much simpler than this!

Saturday Perogies with roasted cherry tomatoes and kale slaw


It's been kind of a crazy week, and I didn't really have a plan (gasp!) for supper tonight. I knew I had a box of perogies in the freezer, and since it had turned really cold and wet, they seemed like just the thing. I boiled them and then fried them in butter. In a separate pan, I cooked some bacon and then added onions. We topped them off with sour cream. They are just so good!
