The busyness of the season has begun with Christmas parties and celebrations with family and friends. I love this time of year, but sometimes it can be a challenge to slow down and savour the special moments. I hope to be able to do that better this year, starting with more simple and quick meals with my family.

Tuesday Four-Star Macaroni and Cheese Bake with baked ham and green salad
This is hands-down the best macaroni and cheese recipe, at least in my opinion. I've been making it for years, and although I might play with the milk by using some almond milk, or adding in some whipping cream, otherwise the recipe does not change. I always add ½ tsp dried mustard to the cheese sauce before mixing with the cooked macaroni. You could add some chopped ham to the macaroni or tomatoes or bacon as the recipe suggests, but we like the mac and cheese just on its own with ham on the side. Loved by children of all ages!
Wednesday Gravy Smothered Beef and Mushrooms with cheese curds, Ultra Crispy Baked Potato Wedges and green salad
My son has been working on a video/film project for Trick's Creek Farm and we have been really anxious to try out their organic, grass-fed beef, "born and raised in Huron County". Their farm is absolutely gorgeous and based on the surroundings alone, the beef should taste amazing! My son invited four of his friends for dinner and we had a couple of other guests as well, including my brother, which necessitated making 1.5 times the recipe. I did not make near enough potato wedges - I would recommend at least two potatoes per person. I also had to do some hard searching for cheese curds. With the closure of Pine River Cheese, those are a bit like gold around here. Everyone was very excited to try this dish (even those who are not fans of mushrooms). It is the ultimate homemade poutine in my opinion! And after tonight, I am not alone in that opinion. The beef was so good - absolutely melt in your mouth. Everyone loved it. I have had grass-fed beef in the past, and honestly, I wasn't really a fan. It seemed to have a strong flavour (and smell when cooking), but not this - it was amazing, just as I'd imagined. If you're looking for organic, grass-fed beef, I highly recommend you check out Trick's Creek Farm. I love that I can make a better choice for my family and eat local at the same time. I'm really looking forward to cooking with their beef again very soon!
Thursday Pesce Primavera with basmati rice
I really love this fish recipe from "Skinnytaste One & Done". It's so pretty and simply delicious. It's been a while since we've had fish around here, so it seemed like high time. The flavours in this dish are very light and the combination of veggies with a little lemon juice and garlic is so yummy. Today was very busy as we visited some of our family. Once we got home, this was quick and easy to pull together. I forgot to top it with the cheese before serving and although that's a lovely addition, honestly, no one missed it. We highly recommend this.
Friday Piled-High Veggie Potpie with green salad
I wouldn't quite classify this as a "fail", but my pumpkin biscuit crust definitely did not puff up. In fact, I had a great deal of trouble getting the centre to cook at all in the 20 minutes. That said, the filling was delicious and we all enjoyed it, enough so that I would make this again, hopefully, with better luck! No photo because, in my opinion, it didn't really turn out. However, if you're looking for a tasty vegetarian meal option, this is a good one.
Saturday Potage Cultivateur
This soup just says "comfort" to me. Today was dreary and wet with freezing rain/drizzle so a perfect time to serve this yumminess.
