My dad was scheduled to have surgery to insert a feeding tube this week. He has been struggling to swallow more and more, and we are hopeful that this will enable him to get all of the nutrition he needs. From here on out, my meal plans will be less focussed on being suitable for someone with dysphagia and will just be (mostly) healthy, tasty, quick and easy.
Full disclosure: there's a lot of beef on this week's meal plan. I'm not sure what it is - maybe the cold, or maybe something else, but whatever the reason, I've been craving red meat. Feel free to substitute where you can with ground turkey or even pork.

Sunday German Schnitzel with Mushroom Gravy with mashed potatoes, carrots and green salad
I really like schnitzel but it isn't something I make often. I was digging around in the freezer this week and found some turkey schnitzel (from Hayter's Farm). I also had a lot of fresh mushrooms in the fridge for some reason, so this recipe seemed like a great way to use those things up. It did not disappoint.

Tuesday Lorraine's Spaghetti Sauce with green salad
We were travelling today since my dad's surgery is tomorrow. We have been bracing for a week of winter storms to come and wanted to make sure he got to the hospital on time. I made this ahead and it warmed up really well. Mom was able to puree it for dad, heat it up ahead of time and bring it along in a thermos. Add a greeen salad and your meal is ready.

Wednesday Steak with Killer Baked Potato Topping, sauteed mushrooms and kale slaw
As I mentioned, we have really been craving beef lately and since it’s been a while since we had steak, tonight was the night. I followed these directions: How to Cook a Perfect Steak Indoors and my son topped them with just some salt and pepper, olive oil and garlic powder. Delicious as always - a real treat. I may have mentioned that no baked potato is complete without my Killer Baked Potato Topping and tonight was no exception.

Thursday Gravy Smothered Beef and Mushrooms with cheese curds, Crispy Garlic Baked Potato Wedges and green salad
Did I mention that we’ve really been craving beef lately? My son had a friend over and so this was made at his request. Oh to be a teenager again and able to eat whatever you want without consequences! I couldn't get my hands on any dried mushrooms this time, so I tried it without and it was still excellent. The dried mushrooms add a depth of flavour that was missing without them, but the boys did not complain.

We were supposed to pick Dad up at the hospital today so we planned to eat out.
I really enjoyed this when I first made it in October and it was equally good this time. I am still loving this blend of flavours and colours, and it's just really different and yummy.
