Cozy Cottage Meal Plan Week 51 - 2019

One of my dearest friends reminded me today that I am a little behind in my posting. (Thanks for the nudge, Laura!) I apologize for that. I didn't get this posted before Christmas, but I'm posting it now and including what I wrote at that time...


The countdown to Christmas continues. How can it be so close already? Are you ready? I'm a little closer. I got some shopping done, and we cut down a beautiful tree last weekend. It's all decorated and ready for the holidays. I hope to get a start on my Christmas baking this weekend, and I'm looking forward to our traditional roast chicken dinner as well as some fun appetizers. I am also eagerly anticipating some time off to really savor the season. I hope you are, too!

Sunday Leftovers / eat out / takeout


I traveled to the Toronto Christmas Market today. Can't get enough of Chimney Cakes or Pierogies with Raclette!! Such a fun and pretty event. If you've never been, you should definitely go. There are so many pretty Christmas lights (and a LOT of selfie-takers!!) I especially loved the giant Christmas tree.





This is a delicious soup, but be warned - it makes a LOT. In fact, it was almost too much for my 5-quart slow cooker (at least I think mine is a 5-quart) so I ended up finishing it off in a stockpot. I could tell it was not going to be done in 5 hours on high. Greta says this recipe freezes really well, so I may try that, too. I love how meaty this recipe turned out, and it has great flavour - from Greta Podleski's "Yum and Yummer" cookbook.

Tuesday Baked Bean Casserole with veggies


Tonight's recipe was another great one to help me pare down my pantry and freezer. I seem to have an awful lot of canned beans on hand for some reason, and this used up two cans. If you like the taste of pork and beans, you will love this casserole. It was a really nice change of pace with ground beef added in. We are loving organic, grass-fed beef from Trick's Creek Farm these days. It's local and just delicious! I only made half the recipe and there is enough to serve 3 of us for another meal. I think this would be very good with homemade coleslaw as a side dish.

Wednesday Confetti Quinoa Salad with cold chicken and green salad


This is such a great salad and also used up some pantry items. It's filling and so tasty. We like it served with cold chicken and a green salad. Don't skip cooking the quinoa in vegetable broth. I didn't have any fancy feta cheese, so I just added some chopped oil-packed sundried tomatoes instead. So good! I halved this recipe for our small family.

Thursday 30 Minute Pizza Crust topped with pepperoni, cheese and veggies


To date, this is my favourite homemade pizza crust. Love it so much! It's amazing with whatever toppings are your family's must-haves.



Friday Slow Cooker Crockpot Ribs with oven fries and green salad


We are still searching for the "perfect" slow cooker rib recipe. These were good. Please let me know what your family thinks.
