Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

Burgers with ultimate burger sauce, buttermilk pancakes, slow cooker ribs, vegetarian mexican lentil soup, slow cooker apricot chicken, potage cultivateur.

On the menu - February 10 - 16, 2019:


Sunday Burgers with The Ultimate Burger Sauce and veggies and dip


My son has been making a lot of burgers lately, and has been topping them with this amazing sauce. (Since breakfast foods are not his thing, he likes to start his day with something else, and lately that's burgers!) Tonight we had burgers for supper and this sauce was super good.



Monday The Ultimate Buttermilk Pancakes with sausage and fruit salad


I know it's a bit early for Shrove Tuesday (plus it's Monday!), but I've been craving pancakes and sausage lately. I always serve them with a side of fruit salad. This has been my "go-to" pancake recipe for a few years now, and they always turn out light and fluffy. I buy buttermilk specifically to make these! If you'd like to change them up a bit and add a little fibre, you can use 1/2 cup of all-purpose flour less 3 tablespoons and add in 3 tablespoons of quick-cooking oats instead. One cup of fresh or frozen blueberries added to the recipe is also scrumptious.




Tuesday Slow Cooker Ribs with fried potatoes and green salad


This couldn’t be simpler. Take 2 racks of ribs (we like pork) and cut them in half. Put them in the slow cooker and cover with a good amount of Diana’s Sauce (I like Chicken & Rib BBQ flavour), or your favourite BBQ sauce. Cook on low for 8 hours. We had leftover baked potatoes from last week, so I fried those up in some butter after topping them with salt, pepper and a little paprika. Love those crispy bits!


Wednesday Mexican Lentil Soup with avocado, tortilla chips and green salad


We tried another vegetarian soup this week and it was wonderful. This recipe comes from the "Yum and Yummer" cookbook by Greta Podleski. I was a little worried that it would be too "different", but it was perfect. The combination of spices gave it a very complex but delicious flavour. We topped ours with a few crushed tortilla chips, some shredded cheese and avocado. I tried the carrots instead of sweet potato this time. Totally loved it and would definitely make this again!

Friday Apricot Chicken with basmati rice, broccoli, cauliflower and green salad


This recipe has come through my inbox a few times, but I've never tried it before. It sounded tasty and simple - just the kind of meal I needed to make today. Love that it used the slow cooker for easy prep. Sooo good! The sauce was super and you couldn't tell that apricot jam was the base, in case anyone in your family doesn't like it.





The last time I made this soup was 7 years ago... After today, I am seriously wondering why I waited so long to make it again! I've had some Gruyere in the fridge for a while, having used it last to make Quiche Lorraine. I have been thinking about making that again but just haven't gotten around to it. This recipe was a fantastic way to use up some of that cheese, as well as some white bread hanging around in the freezer. Don't skip the croutons. So, so good!!
