Cozy Cottage Meal Plan Week 9

Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

Homemade mac and cheese, pork tenderloin, sausage and peppers, apple and onion chicken and quiche lorraine.

This was a good week for new recipe tryouts. There were no fails, and we enjoyed everything I made. Still loving the slow cooker, and once again, it got a workout this week. We had a lot of leftovers, so I only needed to cook something for 5 of the 7 days which was a nice change of pace.


On the menu last week December 9 - 15, 2018:


Sunday Four-Star Macaroni and Cheese Bake with baked ham and green salad

I freely admit to “messing with perfection” at times… I’m not sure why that is. I love trying different chocolate chip cookies recipes, and different spaghetti recipes, for example, much to the annoyance of some people. But for some reason, homemade mac and cheese is something I never mess with. This recipe has been my go-to for years, and it is pretty terrific, in my opinion. It always turns out, and I always have all the ingredients on hand. You can change up the milk by using some almond milk, or even some whipping cream for a richer flavour. You could also change up the cheese if you preferred. This recipe is a teen favourite, and basically no-fail if you’re feeding kids.


Note: I always do the “Special Extra” noted at the bottom of the recipe and add in ½ tsp dried mustard to the cheese sauce before mixing with the cooked macaroni.


Monday Slow Cooker Pork Tenderloin with Honey Balsamic Glaze with mashed potatoes and carrots


This was very tasty and turned out moist and tender with lots of nice sauce. Can't say it enough - the slow cooker wins every time!


Tuesday Crock Pot Sausage and Peppers with pasta and green salad

This was a different recipe for us, but it was good. We like peppers, but we don't always love them, especially when they are one of the main ingredients. Dad found the mild Italian sausage I used quite spicy, but the rest of us enjoyed it. This made a ton of sauce and I actually froze enough for another meal for 3-4 people. I love having something I can pull out of the freezer when I need it.



Wednesday Crock Pot Apple & Onion Chicken with sweet potatoes and carrots


This is very similar to what I made, except my recipe came from "300 Slow Cooker Favorites" by Donna-Marie Pye. (I told you I love that cookbook!) I used boneless, skinless chicken thighs and a bit more liquid (apple cider tonight). We enjoyed this and there was lots of juice which is always good for Dad.



Thursday Quiche Lorraine (The Best) with green salad


I know we just had this at my Christmas brunch two weekends ago, but it was so good I wanted to make it again. The filling was so silky smooth and delicious, and I thought Dad would be able to eat it if I pureed the bacon along with some leftover ham from Sunday. Happily, my hunch was correct and Dad really enjoyed it. He even had a second slice.
