Chicken with bacon, brussel sprouts, butternut squash and apple



Tonight’s supper was a recipe from Wholesomelicious and it was perfect for this chilly fall evening.


This was flavourful and yummy, although I cooked it quite a bit longer than suggested in order to get the vegetables soft enough for my Dad. It would be hard to improve on this recipe, but I think a little goat cheese sprinkled on top would be a great addition. You could also substitute chicken thighs for the chicken breast if you like.

Ready in under an hour, this was the perfect dinner for a brisk fall evening, with its combination of chicken, bacon, butternut squash, brussel sprouts, apple, pecans and pomegranate arils.

Verdict

This recipe was just as Amy said, "exactly what your dinner table needs on a cozy and cool fall evening!" Although Dad needed it ground and I omitted the pecans and pomegranate arils for him, he really enjoyed this combination of flavours. I liked that it was so healthy and different, and perfect for anyone who is trying to eat fewer carbs. It would be good with either rice or mashed potatoes, I think, or even sweet potato if you wanted some carbs for the kids or anyone else who isn't worried about them.
