Gingerbread Granola

Sweet, tart and a little spicy


I may have mentioned that I typically eat the same thing for breakfast every day, at least during the week. I am not a fan of oatmeal in its usual form, but I love baked oatmeal cups and homemade granola. My weekday breakfasts usually consist of Greek yogurt and seasonal fruit. Sometimes I have a baked oatmeal cup along with that, and sometimes I like to top my yogurt with homemade granola. Now that the weather is turning colder, and after a summer of baked oatmeal, I’ve been in the mood for some granola. (In case you're wondering, my lovely square autumn plates were a Homesense find last fall.)


I have tried a lot of granola recipes over the years but I have a few favourites, including Pumpkin Spice Granola, Paradise Granola and the one I’m sharing today - Gingerbread Granola.


As you likely know, granola can be pretty high in calories thanks to all the nuts and seeds, but a couple of tablespoons on top of some Greek yogurt and fruit satisfies my craving and keeps the calories in check.


This Gingerbread Granola may be my absolute favourite to date. It is especially tasty and not too sweet. The cranberries and candied ginger are just the right combination of tart and sweet and taste amazing. This time I added in some pumpkin seeds, instead of using the full amount of pecans (this was a little more budget-friendly and used up something I had on hand.)



I know it seems early to be thinking about Christmas, but we have a family Christmas get together in two weeks, and I always like to give something homemade. This granola makes a lovely, quick and easy gift. The best part is I typically have all of the ingredients on hand. I like to give it in a mason jar tied with a ribbon or in a cute tin (the dollar store often has a great selection at this time of year!)



Serving Suggestions

This is a great snack (good luck not eating a whole cup at once, though!) and is so good on top of Greek yogurt and fruit.


Verdict

This recipe doesn't work for my dad, but I had to share it because I love it so much!
