Quick and delicious

I first tried this soup at a weekend ladies' leadership retreat, and I immediately had to ask for the recipe. I had never tasted anything like it before. So, so good! I especially loved that it was such a departure from your typical leek and potato soup. My friend, Debbie, made it and was gracious enough to share the recipe.
Since then, I have served it dozens of times, and I especially love how quickly and easily it comes together. You can prepare the ingredients a couple of different ways, but my son's favourite is with the vegetables and sausage finely diced.
There is lots of broth in this soup, so it purees easily for those with swallowing difficulties. Depending on the brand of kolbossa you use, it may be a bit peppery, but my dad didn't have any trouble with it.
Sausage & Leek Soup
Leeks, carrots, celery, potatoes and Polish sausage in a tasty broth
1/4 cup butter
2 cups sliced leeks (white part only)
3/4 cup diced carrots
3/4 cup diced celery
2 tbsp flour
4 cups chicken stock
2 cups peeled, diced potatoes
1/4 lb. Polish sausage (I like to use about 1 1/4 cups of turkey kolbassa)
1/4 tsp dried marjoram
pepper
In a large saucepan, melt butter. Cook leeks, carrots and celery until soft but not browned. Add flour and cook for 2 minutes, stirring constantly. Blend in chicken stock. Add potatoes and bring to a boil. Reduce heat and simmer for 15 minutes until vegetables are tender. Add sausage, marjoram & pepper to taste. Simmer for 10 minutes. Enjoy!

One of my all-time favourite soups. Never fails to delight!
