Best Ever Broccoli Salad

Perfect for summer or anytime at all


I've eaten lots of broccoli salad over the years, and lots of variations of it, but in my opinion, this is by far the best one. We first tried it a local restaurant that had a fantastic Sunday brunch buffet. I loved the variety of salads they served, and especially the old-fashioned desserts like Cherries in a Cloud, Six Layer Dessert, No-Bake Saltine Cake or Broken Glass. So, so good! I still miss that place! One Sunday after raving about the broccoli salad as usual to the owner, I finally worked up the nerve to ask for the recipe and happily, she shared!


Best Ever Broccoli Salad


This is the perfect broccoli salad.

Dressing

  • 3/4 cup mayonnaise

  • 1/2 cup sugar

  • 4 tbsp sugar

In a large bowl, mix the dressing ingredients together well and let stand.


Salad

  • raw broccoli and/or cauliflower

  • marble cheese, shredded

  • red onion, minced

  • bacon, cooked and crumbled

  • raisins (optional)

Chop the broccoli into small, bite-sized pieces and place in the bowl along with the salad dressing. Add the rest of ingredients to it and toss well.


You can easily use cauliflower instead of broccoli, or a combination of the two. You can use any kind of cheese you like, but we prefer marble or cheddar. The raisins are really good in it but you can leave them out if you don't care for them.


NOTE: This recipe makes a restaurant quantity of dressing - perfect for a potluck and two heads of broccoli, but quite a lot for a regular-sized family. This salad is good if it sits for a bit ahead of serving, or it can be served immediately. It is still pretty good leftover until the next day, but it doesn't keep well much beyond that.



Verdict

Totally love this salad - definitely the best ever, in my opinion!
