Things are "back to normal" around here and not quite as busy as last week. I am still loving the sunshine each day. And each day a little more snow melts and a little more grass appears. I can see the lilies starting to sprout up through the dark earth, and I can hear the birds singing loudly every morning. Can you believe it's almost April? I think we're all ready for spring!

Sunday Lemon-Butter Garlic Shrimp with broccoli, linguine and green salad
We've had quite a bit of seafood over the past couple of weeks, but I wanted to use up a bag of frozen shrimp and this recipe was quick and delicious. I failed to get a photo of it, but trust me, it was company-worthy. As ever, I love having a recipe to fall back on that uses everyday ingredients I always have on hand.

Monday Quiche Lorraine (The Best) with green salad
I am a big fan of this recipe, and it's pretty flexible. I didn't have 2 cups of whipping cream, so I used 1 cup of whole milk instead and it still turned out perfectly (and with a few less calories!) I also used some ham along with the bacon and that was good, too. This warms up well for late breakfasts or lunches.

Tuesday Hearty Sausage and Quinoa Minestrone with fresh buns and cheese
For years I subscribed to a number of magazines, including Today's Parent. I have to say it has been the source of a surprising number of great recipes. This Hearty Sausage and Quinoa Minestrone is one of them. With just a few ingredients (such as an onion, a carrot, a celery stalk, some sausage, a little quinoa and a couple of other things), you have a filling and fragrant soup in very little time.

Wednesday Skillet Chicken Cordon Bleu with roasted asparagus and Broccoli and Rice Pilaf
This Skinnytaste recipe is awesome! The flavours are light and spring-like, perfect for a sunny March evening. We like it with roasted asparagus and rice pilaf made with cauliflower instead of broccoli. It comes together quickly, in about 30 minutes and ranked a "very good" from the whole family tonight.

Thursday Peppers Stuffed with Turkey, Cheese and Rice and green salad
I was excited to try this recipe since stuffed peppers have never made it onto our table before. As a kid, I wasn't a fan of sweet peppers, but as I got older I began to like them. I notice that my son started out the same way, but he likes them now, too. I incorporated some of last night's leftover cauliflower rice pilaf into this recipe instead of just plain rice and used extra lean ground beef instead of the turkey. I skipped the green onion as there was already some onion in the pilaf. Since I didn't have any fresh basil, I used dried. This recipe was great, although the flavour wasn't very beefy after I added the lemon zest. Next time, I might use about half the amount called for, and add extra sundried tomatoes. I doubled this recipe to serve the three of us.

Saturday PIta Pizza with veggies and dip
Looking for a quick and easy Saturday night supper that's not takeout? Look no further! Totally customizable, this recipe is fast and tasty. This is a fun way to use up odds and ends in the fridge, like the last of a jar of pasta sauce, olives, and any veggies your family likes. These pita pizzas are also good with pesto instead of tomato sauce, or BBQ sauce. (Have I mentioned the plethora of condiments currently in my fridge?) My son had BBQ chicken pizza with BBQ sauce, red onion and mushrooms. Mine had some sundried tomatoes (packed in oil), green olives and lots of veggies with pasta sauce. Yum!
