
Salmon with stir-fried vegetables, turkey meatballs with homemade marinara sauce and arugula salad, a honey garlic sausage sheet pan dinner and seafood-stuffed twice-baked potatoes.
This week we're in recovery mode, with lots of family time and some retail therapy thrown in. That's meant more leftovers and more eating out than usual. When I have cooked, I've kept things pretty simple although I continue to try new recipes. We've enjoyed several good ones this week, but the hands-down "winner" is the arugula salad from Wednesday. It's a wonderful way to introduce more dark, leafy greens into your diet!

Monday Sweet 'n Spicy Salmon with Stir-fried Vegetables and rice
We really loved this simple salmon meal a few weeks ago when I served it, so I decided to make it again. It was just as good this time. This recipe comes from "Skinnytaste Fast and Slow" by Gina Homolka. I highly recommend it (and the whole cookbook!) Bok choy is such a nice change of pace and it goes so well with sweet peppers and mushrooms. My son enjoyed this, too (he didn't have it last time), and thought that the sweet 'n spicy salmon was especially good.

Wednesday Baked Turkey Meatballs with Easy Marinara Sauce and Easy Arugula Salad
My son requested pasta tonight, and I was happy to oblige, but my meal planning was a little off. I've been out of sorts, so I guess I should give myself some grace. I had planned to make a pasta dish using arugula and Italian sausage, but a search of the freezer failed to yield any sausage. Instead, I decided to make some turkey meatballs and a homemade marinara sauce since I did have ground turkey and a recent inventory of my pantry revealed that I have way too many cans of crushed tomatoes. This sauce was quick and good. It's not the best one I've ever made, but it certainly worked with the meatballs and spaghetti. We had way more spaghetti than we needed because I cooked two packages (more company!) The sauce likely would have been better with less pasta. The meatballs were very flavourful and cooked quickly, and I would definitely make them again. Arguably, the best part of the meal was the salad! My son loved it, and between five of us, we ate every bite. Apparently arugula will be going on my grocery list as a new staple!

I adapted this sheet pan meal to use up some veggies we had leftover from a weekend gathering. Honestly, I couldn't really tell that there was a sauce on the broccoli. Maybe if I'd used Brussel sprouts as the recipe suggested, it would have been more obvious. Regardless, this meal came together quickly and was tasty. I had enough sausage that I didn't feel we needed the chicken as well, but I'm sure it would have been good.
Saturday Seafood-Stuffed Twice-Baked Potatoes with broccoli and green salad
I've had some seafood "odds and ends" kicking around in my freezer for a while, and this seemed like the perfect recipe to use them up. I made this with one piece of salmon, one piece of halibut, one piece of sole and some cooked shrimp (about 1 pound total). I cooked the fish on a separate pan at the same time as I baked the potatoes. This recipe was used as a starting point for a lighter version of these delicious twice-baked potatoes. Rather than the 1/4 of butter the recipe calls for, I used just 2 tablespoons of butter and 2% milk rather than the half-and-half cream. I also used fewer green onions and about 2/3 cup of shredded cheddar cheese. I cut off only the top third of the potato and scooped out the flesh to add back in. This was a delicious way to eat potatoes and seafood!
