Pork tenderloin in a creamy sauce, roast chicken dinner, slow cooker chili con carne and easy lasagne.
This was the most relaxed and peaceful December I can remember in years. There were no last minute, frantic trips to the mall, and for once I felt good about all of the gifts I bought, instead of feeling like they were somehow not enough. I am so grateful for that, and grateful to have felt like I was actually able to be present and just enjoy time with family and friends this year. There was less shopping, more talking, more walking and more time outside.
Even our menu seemed more relaxed than usual. As always there was tons of food and everything was enjoyed by all. I hope you were able to celebrate with your loved ones and experience some rest and peace as well.

Monday Smothered Pork Chops with carrots and egg noodles
Once again I made this with pork tenderloin and it turned out just as great as last time.
Tuesday Roast chicken with mashed potatoes, turnip, carrots, stuffing, cranberries, gravy, pumpkin pie and apple pie
We celebrated Christmas today and had our traditional Christmas Dinner of roast chicken. This meal never disappoints. Mom's stuffing is amazing. My son says there are only about 4 things I make that he really doesn't like (or that he prefers someone else's to mine), and sadly, stuffing and gravy are 2 of the 4. lol I tried both kinds of stuffing and he's right, there is just something about my Mom's.
I believe I have finally found "the best" pumpkin pie recipe, and my mom's apple pie is definitely the best. Those recipes, along with the stuffing, will be shared soon!
Wednesday Winona's Famous Chili Con Carne with Quick Cheese Biscuits
Today we were serving a crowd, so chili con carne seemed like a good choice. And as a bonus, the little ones loved the cheese biscuits!
Thursday Uncomplicated Lasagne with Caesar salad
Again, we were serving a crowd today, and there's nothing like lasagne to please mostly everyone.

We had a LOT of leftovers this week, so there wasn't much cooking happening around here over the last couple of days. We were also away quite a bit, visiting family and friends.
