
Asparagus Greek chopped salad, taco casserole, orange beef and broccoli, potato boats and Greek stuffed peppers
How are you doing these days? I'm grateful that spring is coming and things are starting to turn green outside. Overall, we're doing well around here, but I will say that even though I love to cook, I have to admit, it would be nice to eat out at a restaurant again. Or even just get some kind of takeout, besides pizza, although I do love pizza, don't get me wrong! Since options are limited in the country where I live, I continue to experiment at home. This week's (Light) Orange Beef & Broccoli was even better than takeout and definitely healthier. The Asparagus Greek Chopped Salad was super delicious as well, and we loved the Greek stuffed peppers. Taco Casserole is unlikely to be found on any takeout menu, but your family won't notice!

Monday Asparagus Greek Chopped Salad with Turkey Burgers
If you're bored with the usual salads you make for your family, you'll want to give this one a try. It was absolutely delicious! I wouldn't have thought of adding asparagus to a Greek salad, but we loved it. I served this with turkey burgers (no bun), but it would be good with pork chops or chicken, or your favourite meat (grilled or otherwise). This was an awesome carb-less meal and was very satisfying. I look forward to serving it again soon.
Tuesday Easy Taco Casserole with Quick and Easy Black Beans and Rice and green salad
You just can't go wrong with this yummy (albeit less than healthy) taco casserole. It's quick to prepare, makes a lot of servings and is just darn good. I've mentioned this before, but I love that it uses up all of those broken tortilla chips in the bottom of a bag, and it's also great for finishing up a jar of salsa and any cheese odds and ends. We love it served with black beans and rice and a green salad. Definitely a family favourite.
Wednesday (Light) Orange Beef and Broccoli with brown basmati rice
As Lindsay who blogs at Pinch of Yum writes, "This orange beef and broccoli is going to knock your socks off", and trust me, she's not kidding! This was "wow!" at first bite, and that sentiment continued throughout the entire meal. I've made a couple of different beef and broccoli dishes in the past, but never one with orange. This is my new fave! I loved that I had all of the ingredients to make this on hand and that they were inexpensive. We don't have a lot of takeout food options in our area, and in our opinion, this tops takeout any day! It also came together in a flash which is awesome when you don't feel like spending a ton of time in the kitchen. Flank steak is a reasonable and delicious beef option, just perfect for this dish - especially when it comes from Trick's Creek Farm.
Thursday Potato boats with corn
These were served by request and they remain one of my son's favourite meals, even after all these years! Not fancy, but easy and just good. Cook 2-3 wieners per person (we like Schneider's Red Hots). I usually boil them for 5 minutes. Split them partway open down the middle and spread with regular mustard. Top with mashed potatoes followed by sliced cheddar cheese. Bake in the oven for approximately 15 minutes at 350 F.

Saturday Greek Stuffed Peppers
These were soooo good! I would highly recommend them as a meatless option. They were super tasty and filling. I love Greek flavours and these stuffed peppers showcase those to perfection.
