I tried several new recipes this week along with a couple of favourites. The days are longer and the meals are a little lighter. I love spring!

Sunday Chicken Artichoke Pasta with roasted veggies
Today my meal plan was a little fluid. We were going to cook some chicken on the barbecue but since it was storming, we opted for roasting. This recipe was the perfect accompaniment along with some roasted veggies. (We omitted the chicken in the pasta, but I'm sure it would be delicious). This pasta dish has been on my "to make" list for several weeks as I continue trying to get rid of excess condiments, and this week I finally got around to making it. It was a really yummy way to use up some black olives, oil-packed sundried tomatoes and canned artichoke hearts. Give it a try!

Wednesday Lentili Chili
From the "Looneyspoons Collection" cookbook, this vegetarian lentil chili was different, but good. At least I liked it. My son ate it, but wasn't really a fan and my mom found it spicy. The sour cream definitely helped with the heat, plus it's so good! We also liked it topped with tortilla chips, cheese and avocado. Please note, this recipe is in metric so you may want to convert it to Imperial.
Thursday California Chicken Wraps with veggies and dip
This was a nice light supper that would also be really good in lunches. I didn't have any roasted chicken, so I used deli turkey and it worked well. I omitted the basil because I didn't have any. Everyone really liked these. Win! And bonus, I used up the last of a jar of roasted red peppers and some hummus, too.
Friday Mini BBQ Cheddar Meatloaves with baked potatoes and Asiago Mashed Cauliflower
It's been awhile since we've had meatloaf and I had some barbecue sauce I wanted to use, so this was the perfect recipe to make tonight. These little meatloaves cook fast and are so tasty. These would be great with mashed potatoes, but we opted for mashed cauliflower instead.

I had planned to eat out tonight, but our plans changed, so I needed to come up with something quick and easy that used ingredients I had on hand. Enter this favourite, Egg Roll in a Bowl. Always quick and always delicious.
