Cozy Cottage Meal Plan Week 23 - 2020

My little feathered friend left the nest this week. He is certainly way cuter now that he has some feathers. I'm not 100% sure he's actually an Eastern Phoebe as he seemed kind of big and there were some different coloured eggs (that didn't hatch) in the nest along with him. Since he's flown the coop now, it will be hard to know, but it was fun to watch him take his first flying leap into the big wide world.




I loved that this week felt more like spring with some cooler temps again. I pulled out my slow cooker and also made some stovetop dishes. We really enjoyed the variety of meals we had this week, including a delicious summer salad that your crew will love.

Monday Spaghetti Pie with green salad and garlic bread

This was really good and didn't require any special ingredients to make. It was a super way to use up some of the giant batch of Roasted Vegetable Pasta Sauce I made on Saturday. I topped the pie with some turkey pepperoni but you could easily use sausage or any other meat your family likes, or leave it meatless. It was fast to prepare and you know how I feel about cheese... My son loved this and I thought it was an awesome change from simply reheating pasta and sauce.

Tuesday Greek Beef Pitas with Greek Salad


If you're looking for something different to serve on "Taco Tuesday", try these Greek pitas. This is one of the fastest meals I've prepared in a while and it was really good - a great break from the way I typically serve ground beef. As ever, Trick's Creek Farm ground beef stole the show. My son was a bit worried that the lemon and mint flavours would overpower the filling, but they didn't at all. So good! We really enjoyed these and they were surprisingly filling. I warmed the pitas a bit before serving and added a quick Greek salad on the side. I just rough chop cucumbers, tomatoes and sweet peppers, throw in some Kalamata olives and feta cheese and top with bottled Greek salad dressing (or Italian would also work). Mix and serve.

This was definitely not the typical way I serve pork chops, but it sure was a delicious way. This dish cooked quickly (you know I love that!) and used pantry/freezer staples. The pork chops were moist and tender and the sauce gave it some oomph.

I first served this salad last summer and it was soooo good! We totally love this Sensational Spinach Salad from Greta Podleski's "Yum & Yummer". (The recipe above is exactly the same, plus some peeled, diced cucumber and minus the chicken). I added some rotisserie chicken and supper was on the table in a flash. Don't omit the feta cheese and red onion.


Spinach, Strawberry and Avocado Salad

The linked recipe above is close to the one I used which came from Skinnytaste "One and Done", simply called Chicken Fajitas. I marinated the chicken breasts for a few hours in the yummy combination of sweet pineapple juice and zesty lime. So awesome, especially with my "secret" guacamole recipe. Mexican as a theme for Saturday night wasn't a plan, but apparently it is a thing around here right now!
