We eat a LOT of salads in the summer, and I love changing things up by using different vegetables and grains. You might think salads can be boring, but I disagree. There are an amazing variety of dressings and combinations to keep things interesting, not to mention delicious!
I'm taking a week of holidays next week, so this week I won't be serving as many salads. I'm planning ahead in order to minimize the amount of cooking I have to do next week. This week's meal plan includes some "big batch" recipes (or recipes that I have doubled) so that I have enough leftover to serve while I'm off. Some of the meals could also easily be frozen and just pulled out when you want to serve them. (I did that with last week's Comforting Shredded Beef and some baked chicken breasts). This is also a great option if you're going camping and won't have the same variety of pots and pans that you have at home or if you just want to make meal prep quick and easy.

Monday Spinach, Strawberry and Avocado Salad with chicken
Today was simply beautiful with lots of sunshine and a cool breeze. In order to maximize the day, I kept supper simple with Sensational Spinach Salad from Greta Podleski's "Yum & Yummer". (The recipe above is exactly the same, plus some peeled, diced cucumber and minus the chicken). I bought a rotisserie chicken so I could keep the oven off and our meal was ready in a snap. Tonight I omitted the feta cheese and red onion, but they do add to the deliciousness!

Tuesday Perogies with onion and bacon, ham, carrots and a green salad
The last time I had perogies was in December at the Toronto Christmas Market, and they were topped with melted raclette cheese. Amazing! I've been dreaming about them ever since. Tonight's meal was not the healthiest but it was so good. I haven't served perogies in forever, so I boiled up a box and then fried them in butter, because butter... In a separate pan I cooked some bacon and then added onions. We topped them off with sour cream. On the side I served a small ham - it was cooler today so I didn't mind running the oven.
Wednesday Beef and Cabbage Stiry Fry (or as we like to call it, Egg Roll in a Bowl) with rice
Tonight I made this with ground beef instead of ground turkey like I usually do. I think I prefer it made with turkey, but no one else said anything, so I'm not sure they noticed! It is always quick and always yummy. Since everything is prepared on the stove top, my kitchen doesn't get hot from the oven. Love that, too!
Thursday Crock Pot Italian Turkey Meatballs with spaghetti, zucchini noodles and green salad
Last time I made this, I wished I had doubled the recipe so there were lots of leftovers. Today I wasn't taking any chances, so I doubled it. My crock pot was full, but it turned out as good as ever. (One pound of ground turkey yields about 26 1.5" meatballs.) This recipe is another of my crock pot faves. My son is looking forward to meatball subs with great anticipation!
