It's summertime and the livin' is easy... And so is the cooking, at least around here.
I've been trying to spend a bit less time on the computer in my spare time, so I am posting more sporadically these days. Sorry about that. But never fear - the meal planning and the cooking continue!
This week I had fun with more wonderful summery dishes - zucchini noodles with shrimp as well as a super simple pasta dish that I think your whole family will love. I also served an Asian-style salmon again and tried a new cucumber salad recipe. We ended the week with one of our favourite Mexican meals, the beef burrito bowl.

Sunday Zoodles with Shrimp and Feta and green salad
We thought this meal was totally awesome. It was light, fast and so delicious. Plus it was healthy and the ingredients to make it were so simple. It made an awesome lunch but would be good for dinner as well. I will definitely be making this again.

Monday Veggie & Bacon Pasta with Herb-Garlic Cheese Sauce and green salad
This pasta sauce could hardly be any simpler, or any more delicious. Today was a bit cooler so I decided to brave turning the oven on for a few minutes to roast the veggies. I used frozen broccoli because that's what I had on hand, but broccolini would be awesome if you can find it, or regular broccoli. Honestly, I think pretty much any veggies your family enjoys would be tasty in this dish! Give it a try. I think you'll love it.
This meal was so delicious last time I made it, I thought it was time to make it again. If you're looking for some Asian-inspired recipes that everyone will love, you should definitely give these a whirl. The salad is refreshing and crunchy and just so good - the cilantro and julienned sugar snap peas are my faves. The salmon is also amazing and a different spin on fish.
Wednesday Salad Plate
If you've read my post, "Summer 2020 Salad Roundup", you know that we eat a lot of salads in the summer, and we all adore what we call "the salad plate". Tonight I served the rest of the Crunchy Asian Slaw from last night along with some homemade deviled eggs, the ever-popular Cold Macaroni and Tuna Salad (#16 in the post) as well as a BLT Salad with Avocado from Skinnytaste (#10 on the list). I also made a deliciously different Dill Cucumber Salad. I love that you can use any combination of salads you have on hand (homemade or storebought). Just add a protein (deviled eggs, cold meat, cheese) and some fresh bread if you like, and you have a delicious and quick meal.

Friday Mucho Yummy Beef Bowlrito
This is still one of our favourite Mexican dishes. The beef is perfectly spiced and we love all of the toppings - homemade salsa and guacamole, shredded cheese, sour cream, chopped tomatoes (not pictured), corn, and black beans. So, so yummy!! If you're looking for a change from tacos, this is fantastic. Thanks to Trick's Creek Farm for their superior organic, grass-fed ground beef.
