
Hamburgers with cowboy caviar, salmon with broccoli salad, lasagne, chicken souvlaki, beet and arugula salad and lentil falafel bowls.
This was a busy week with lots of company so I kept the meals super simple and summery. We've spent a lot of time outside eating lakeside, hunting frogs with my niece and nephew, swimming and enjoying our fire pit. After many years, we finally have one and are making great use of it this summer.

On the menu August 4 - 10, 2019:
Sunday Cowboy Caviar with hamburgers, chips and veggies and dip
My son had a bunch of friends over for a campfire tonight, so I served standard teenage fare - burgers, chips, veggies and dip. I don't think they were expecting quite so much food (my son says next time he'll warn them!), but they seemed to enjoy it all. This Cowboy Caviar is always a big hit, but be warned, it makes a LOT. Happily it keeps for a while.
Monday Hot dogs with chips, veggies and dip
This may not be my best week nutritionally-speaking, but it's definitely been easy so far! My brother and his family are visiting from California so we thought it would be fun to have another campfire and roast hot dogs over the fire tonight. Since campfires are currently banned there except in approved spots, it was kind of a novelty. For dessert we had marshmallows, of course!
It doesn't usually take long for me to start craving something healthy after eating junk, so I roasted salmon tonight and served it alongside this favourite salad. I didn't end up making this exactly salmon recipe, but I did serve tomatoes and avocados alongside ours, and I cooked it in butter in a frying pan. So good!
Wednesday Uncomplicated Lasagne with Caesar Salad
Although "uncomplicated", this dish is a little bit of work, but well worth it! My niece and nephew like lasagne so I try to serve it whenever they visit.
Thursday Weeknight Chicken Souvlaki
My son commented that this chicken was "really good". I marinated it all night, rather than just for 15 minutes, so I'm sure that was part of it; however, the whole recipe was simply really good. Loved that it used ingredients that I had on hand, and especially that it made a dent in the excess produce I seem to have right now! This was quick and easy, and you don't need the oven - another summertime plus.
Friday Pizza and Arugula with Grated Beets Salad
We were in the mood for pizza tonight, but in an effort to keep it somewhat healthy, we opted for thin crust and I served it alongside this amazing salad. Top a bunch of arugula with some grated beets and serve with a simple Dijon vinaigrette - combine 1 tbsp Dijon mustard, 1 tbsp white wine vinegar, 3 tbsp olive oil and some salt and pepper (makes 2 servings).

Saturday Lentil Falafel Bowls
This was my first time ever trying a falafel - homemade or otherwise, so I have no comparisons, but we thought these were very good. My son worked tonight, but I am fairly certain he wouldn't have been so enthused about them. The recipe I actually made came from FIXATE Volume 2 so I can't share it with you, but this link is close. I served them on a bed of chopped cucumbers, tomatoes and red onion and topped them with a mixture of Greek yogurt, lemon and mint. I also added a homemade tahini dressing. With just 243 calories per serving of 3 baked falafels plus the salad (not including the tahini dressing), you can't get much lighter! Although our Chicken Souvlaki meal from earlier in the week might at first glance seem very similar, they tasted very different.
