Cozy Cottage Meal Plan Week 33 - 2020

I adore summer, but my one complaint is the speed at which it passes! That said, we have definitely enjoyed every minute. I'm a bit behind in my posts because I've been too busy enjoying these last days of summer.


This week's meal plan had a bit of a theme - lots of corn! Around here, we love summer sweet corn, especially on the cob, and I served it quite a bit this week. What's your family's favourite summer veggie?



On the menu August 9 - 15, 2020:



Sunday Grilled Cilantro Lime Chicken with Sweet Potato Fries, Sweet Potato Fries Dip, green salad and corn on the cob


We grilled this chicken tonight instead of smoking it, and almost all of us really enjoyed it. Apparently, no one except me really likes cilantro, but they loved this chicken. I guess I was expecting a Mexican-inspired meal, so the cilantro-lime flavour wasn't a surprise to me. To avoid smoker burnout, I made the sweet potato fries in the oven. Again, three out of four of us really enjoyed these, but I did struggle to get them crispy. Next time I will switch the trays around every 10 minutes since I don't have a convection oven. I adapted the dip recipe by using 6 tbsp of mayo, 6 tbsp of Greek yogurt, and just a dash of ground chipotle powder. It was really good and just the right amount of spicy for us. This was a different meal than we've been having from the grill, but it was a good one.

Tuesday Slow Cooker Beef Fajita Bowls with green salad


This was a tasty twist on fajitas, and the quinoa was a nice change from rice. I cooked the whole dish for 4 hours on high, rather than just 2, and I also found that my quinoa required more liquid and some stirring to ensure that it all got cooked. I would try using 1 1/2 cups of beef broth instead of just 1/2 cup. We topped our bowls off with some shredded cheddar, homemade salsa, smoked corn leftover from the weekend, and homemade guacamole. I'm not sure what happened with my avocados this week as they were very pale, but the whole meal was buen! As always, we love steak from Trick's Creek Farm. Melt in your mouth!!

Wednesday Mediterranean Baked Sole with yellow beans and Broccoli Rice Pilaf


Happily, I've been winning with fish lately. This baked sole was scrumptious and we all loved it. I served it with my absolute favourite rice pilaf recipe which I often make it with cauliflower, but tonight I used broccoli. This meal went very well with fresh yellow beans cooked the way my grandma always did, boiled with just a few onion chunks.

Thursday Best Summer Pesto Pasta with green salad and garlic bread


This was really delicious and a great vegetarian meal. We love pesto around here, and it was so good with summer veggies. If you're ever in need of a quick and easy pasta dish, I highly recommend just opening a jar of pesto and stirring it into warm pasta. Thanks to my friend, Elysa, for the tip!

Friday Honey Garlic Dijon Pork Tenderloin with Grilled Cabbage and leftover pototo salad


This pork tenderloin was moist and flavourful with a yummy sauce - you can't go wrong with honey, garlic, and mustard. And if you've never grilled cabbage before, this is a must-try. The only change you might want to make is to fry the bacon before wrapping the cabbage. It cooks, but it's more steamed than crisp. Still good! Don't skimp on the spice mix. Our Broil King pellet grill gave it all just a hint of smoky flavour which we loved.
