Dreamy zucchini tomato casserole, Halal chicken and rice and steak with killer topping for baked potatoes

I was on holiday this week, so I kept things pretty simple in the kitchen. We also had takeout a bit more than usual.


It was a beautiful week if a little on the warm side for me. One of my Dad's favourite wildflowers bloomed this week - the Blazing Star. I think there were even more this year than last year which was neat to see. They are such beautiful flowers, and I love the way they contrast with the lake.

Tuesday Dreamy Zucchini Tomato Casserole with turkey sausage and new potatoes


We had dinner with some good friends on the weekend, and my lovely friend, Susan, served this amazing zucchini tomato casserole. If you are "plagued" with too many zucchini, this is a fabulous way to use some of it up! I'm pretty sure the secret ingredients are cheese and butter. Thanks again for sharing the recipe, Susan! She served it with steak and baked potatoes with peppercorn ranch dressing, but it paired equally well with sausage tonight.

Wednesday Halal Chicken and Rice and Naan bread


I love where I live, but our takeout options are a little limited. There are definitely no food carts in this area offering anything like this. This was a fun meal to make, and definitely different than the typical way I serve chicken and rice. The white sauce was just as Leigh Anne Wilkes said - super delicious!! We really enjoyed this meal with Naan bread.

Friday Grilled Steak with corn on the cob and baked potatoes with Killer Topping for Baked Potatoes


Since we bought our Broil King Pellet Grill, we've been eating a lot more steak. The model we bought goes up to 600 F so you can really get a great sear on your steak. We tried corn on the cob as well as some broccoli and mushrooms tonight. All so good! My favourite steaks come from Trick's Creek Farm - local, organic and grass-fed.
