This week was a little wet and stormy, but I still totally love fall. The sunshine (when we get it) is so beautiful the way it shines through the trees and highlights all the gorgeous leaves as they begin to turn red. This vine is Virginia Creeper, a member of the grape family (who knew?) and is prolific in our area. It's one of the first leaves to turn red. So pretty!

Sunday Slow Cooker Texas Pulled Pork on a bun with coleslaw and potato salad
As the weather gets cooler, I start thinking about my slow cooker again and I'm reminded of what a fan I am. It's so nice to throw a few ingredients in the stoneware in the morning and then sit back and wait for it to cook. This recipe doesn't require any pre-browning which is just one reason I love it! (Sorry, no photos).
Monday Chicken Divan, Lightened Up with brown rice
Still one of my favourite dishes. I still need to update this photo. Sorry about that! As always, I make this with a cut-up rotisserie chicken instead of chicken breasts and use regular Cheddar cheese instead of Swiss. I also omit the sherry. Super good.
Tuesday Steak with baked potatoes, Killer Topping for Baked Potatoes and broccoli
We still really enjoy steak cooked this way: How to Cook a Perfect Steak Indoors. Somehow we survived another entire summer without a barbecue, and I don't think we really suffered. My son likes to top his steak with some freshly ground salt and pepper and some garlic powder. I like to season mine with Keg Steak Spice. We love a great baked potato, and this topping is the best. We can't serve steak without fried mushrooms and broccoli either!
Wednesday Italian Carbonara with garden salad
My son made supper tonight, which was lovely. He did a great job and this Italian spaghetti carbonara was delicious. He felt it needed more pepper and more salt, but the rest of us enjoyed it. I find it really interesting that he is inspired by videos about cooking, whereas I prefer to read a recipe either online or in a cookbook. He got the recipe for this dish here: How to Make Classic Carbonara We used pancetta and Parmigiano Reggiano. Kids and teens will love this!
Thursday Mediterranean Meatball Greek Salad
I know we seem to eat a lot of Greek-style food, but I have always loved the combination of cucumbers, tomatoes, sweet peppers and feta. I'm still trying to empty the freezer, so this was the last of my frozen meatballs. Once again, I "cheated" and used a store-bought dressing on this salad as well - creamy feta this time (not pictured), but you could totally use an oil-based Greek dressing or any other dressing you like. So good and so quick!
Friday Grilled cheese and tomato soup with veggies and dip
You may be unaware of the debate around grilled cheese but there is one! Some people swear that using mayonnaise instead of butter takes it over the top, but personally, I can't give up the butter. My son tried the mayo thing and was unimpressed. We will be sticking to butter around here. Every once in awhile I just get a craving for grilled cheese and tonight was the night. So fast and so, so comforting!! (Sorry, no photos of this either).
Saturday 15-Minute Mediterranean Fish Dish with green salad and wild rice
I so love this fish dish! This recipe comes from the "Yum & Yummer" cookbook by Greta Podleski. I always use frozen sole in this recipe since I'm not a fan of "firm" fish like cod or haddock. This dish is one of my favourites because it's really quick, easy and always delicious. It's perfect for this time of year when tomatoes are in season.
