
Hobo dinners, egg roll in a bowl, meat pie, honey mustard chicken bake and feta shrimp skillet
I found this summer busy, and so far, September isn't much better (thus the late meal planning post!) I don't really mind, but it does mean that meal planning continues to be critical! I so appreciate my slow cooker for its convenience, but I've also been thinking about some meals that I can prepare ahead, such as soup, another one of my faves. I'm not sure I'm quite ready to pull out my soup pot or my crock pot just yet, but they are definitely on my mind.
On the menu September 15 - 21, 2019:
Sunday Hobo Dinners with green salad
Still one of my son's favourite meals, and one that really says, "comfort" to him. I use frozen hamburger patties and top each one with cheddar cheese, sliced onion, sliced carrots, sliced, peeled potatoes, ketchup, and some canned, diced tomatoes. Before sealing up the tinfoil, I add some water (1-2 tablespoons). I usually bake them for about 1 1/2 - 2 hours at 350 F. Don't forget, the linked recipe only makes 1 serving, so you will need to multiply it by the number of people you are serving. Add a salad or some coleslaw and dinner is done!
Monday Beef and Cabbage Stir Fry (or as we like to call it, Egg Roll in a Bowl) with rice
I've had a bag of coleslaw in the fridge for a few days that needs to be used up, and this recipe is hands down the ultimate way to do that, at least in my opinion. NOTE: If you don’t like spicy foods, we find that even 1 teaspoon of sriracha is hot. It can be added to taste afterward but gives this dish a unique flavour, so you won’t want to leave it out altogether. I like to use a bag of coleslaw mix for easy prep and I substitute ground turkey for the ground beef. I still use 4 grated carrots. Don't skimp on the fresh green onion or sesame seeds! This is another budget-friendly dish. I find that ground turkey is usually around $5/pound and you can buy a bag of coleslaw for under $3.00. This really stretches the turkey, especially when you serve it with rice.
Tuesday Aunt Aggie's Meat Pie with salad
I love this recipe! It's so good and I love that it's so comforting and uses ingredients I typically have on hand. Even my son who always says he doesn't like meat pie loves this one. It's good warmed up and leftovers make a great lunch.
Wednesday Honey Mustard Chicken Bake with wild rice
Chicken thighs were on sale this week, so it seemed like the perfect time to make this recipe again. I really enjoy this mix of veggies and the honey mustard topping on the chicken is really good. Wild rice was the perfect accompaniment.
Thursday Apple-Pecan Pork Chops with Sweet Potato Beds and brussel sprouts
This meal seems especially fall-like to me, so it was perfect for tonight. I like to use pork tenderloin instead of pork chops in this recipe. I also really love these Sweet Potato Beds (and the accompanying pork recipe in that link is great, too!) This meal was pretty to look at and very tasty.

Saturday Feta Shrimp Skillet with broccoli, spaghetti and green salad
This is one of my favourite ways to eat shrimp and I love that it's low calorie, but tastes like something you'd eat at a five-star restaurant. It's also super quick and easy to prepare - another plus!
