Cozy Cottage Meal Plan Week 46 - 2019

Ultra crispy potato wedges, souvlaki-spiced chicken thighs, beef and shiitake mushroom burgers, pasta risotto and turkey chili stuffed acorn squash.

Winter has arrived in Midwestern Ontario, and so far most of last week's 30+ centimetres of snow are sticking around. I have to confess, I love it! Sorry to those of you who hate winter, but I think it's so beautiful. I love it when the snow is swirling, the wind is blowing and the fire is roaring (and we don't have to leave the house!)

We are still enjoying Chef Michael Smith's Creamy Tomato Soup with Grilled Cheese from yesterday, and it may have even tasted better today! I so wish I could share his recipe, but for now, you'll have to make do with the one I linked in my last post.



Monday Turkey Burgers with Ultra Crispy Baked Potato Wedges and Greek Salad


Tonight I was craving burgers and fries for some reason. I think it's all the snow - potatoes are so comforting! I made do with some turkey burgers from the freezer and some homemade potato wedges. These wedges are definitely ultra crispy and may be the ultimate recipe! Definitely the very best ones I've ever tried, and I'm anxious to test them out again in the near future... possibly alongside some Gravy Smothered Beef and Mushrooms! We topped them with Parmesan cheese and omitted the parsley. Sooo good!! Note: I used 6 small potatoes - if you're serving 4 or more people, I would recommend using more potatoes. They're highly addictive!





This was another Good Food meal kit order. Honestly, we weren't very impressed with this one. Some of the produce wasn't in very good shape by the time I went to use it. Although their customer service rep was very helpful and offered a $20 credit, it was still disappointing to think that I had everything I needed for the recipe, only to find out I did not. I liked this, but we definitely didn't have enough tzatziki for 4 people (and it was really good tzatziki!) There were ample chicken thighs and veggies, and the flavour was good overall, I thought. My son didn't care for it. He didn't think that the Greek flavours went very well with the orzo pasta. He also wasn't a fan of the green beans. Personally, I wouldn't want to make it again, or if I did, I think I would omit the green beans from the Greek salad. This did not keep well either, as the vegetables in the Greek Salad got very soft.

This week's theme seems to be potato wedges. The sweet potato wedges were perfect, although they weren't crispy at all. The burgers were very different. Good, but different. I think our favourite part was the bok choy "salad". Definitely inspiring, and not the usual way that I eat bok choy. I would definitely use it in a salad again.

Friday Pasta Risotto with Peas and Pancetta, garlic bread and green salad


This is such a quick, easy and delicious and meal, and so kid (or teen!) friendly. We always add extra Parmesan and according my son, it's better than takeout!

Saturday Turkey Chili Stuffed Acorn Squash with green salad


This was a great low-carb dinner option tonight. I think I'm still trying to decide if I actually liked stuffed squash or not, but everyone else really enjoyed it. The chili was very mild and I was excited to actually find Rotel at my local Loblaws store!
