Cozy Cottage Meal Plan Week 49 - 2019

I can hardly believe that it's already December and the countdown to Christmas is on. If I'm honest, aside from decorating, I haven't had a lot of time to really think about the holidays yet. I definitely need to get going on my Christmas baking and finish up my shopping. And get a tree! I am excited to be going to cut down a Christmas tree for the first time ever this year. I'm so glad we've already had some snow - hopefully, it sticks around!


On the menu December 1 - 7, 2019:



I wanted to make something that I could put in the oven and basically forget about tonight, so this was an excellent choice. I also wanted to make some space in my fridge. This recipe is great for using up various vegetable odds and ends. You really can't go wrong. Tonight I combined parsnips, carrots, sweet potatoes, an apple, a few pears, beets and a handful of mushrooms (the last of a package). Always good!

Tuesday Cheesy Caprese Chicken with Roasted Tomatoes, wild rice and steamed broccoli


We loved this cheesy chicken recipe. The chicken was moist and the sweet tomatoes, salty cheese, basil and balsamic glaze topped it off perfectly. This was pretty simple to put together and if you start the rice first, it should all finish cooking around the same time. I used Campari tomatoes (my favourite!) and a tube of basil instead of fresh. I think you'll love it as much as we did.

Wednesday Roasted Whole Salmon Fillet with Dill-icious Maple-Mustard Marinade and brussel sprouts with wild rice


I have a confession to make... I may be guilty of causing my son to become sick of fish, salmon in particular... I admit that I love fish and for a while, served it at least once a week. It's probably been a year or two since he has eaten salmon, but he thought this was awesome. Me, too! This may have to go on rotation in our meal plans because it was just that good.

Thursday Gringo's Starr baked cavatappi pasta with spicy, ground-turkey tomato sauce and two cheeses with salad


My dear friends were guinea pigs tonight as we taste-tested this recipe tonight. It was good, and kids would love it. I omitted the jalapeno pepper because I was worried it would be too hot, but if your family likes things spicy, I would definitely use it. Or you could just use a medium salsa instead of mild. I also used macaroni because I couldn't find the pasta shells I knew I had bought. I see pantry re-organization in my future! lol If I was making this again, I would try harder to find medium-sized pasta shells. Four cups of macaroni was a bit too much and this dish needed more sauce.



Friday Crockpot Pot Roast with green peas


Some days it's just nice to stick something in the slow cooker and not think about it until suppertime. This recipe is one of those.



Saturday Quiche Lorraine (The Best) with green salad


I love this silky quiche - it's just so good with a green salad and the leftovers are wonderful warmed up as well - perfect for breakfast, lunch or dinner.
