Cabbage Patch Soup, Chicken Divan & Uncomplicated Lasagne

A classic spaghetti sauce, mediterranean fish, slow cooker greek chicken, steak and baked potatoes and chicken noodle soup.

Apparently I was in the mood for some tomatoey goodness this week... Well, actually, I guess I am always in the mood for tomatoes (BIG fan!!) And I guess we ate a lot of salad this week, too, in spite of the romaine lettuce scare. Loved having steak this week, too. I hope you and your family enjoy these recipes. Sunday Turkey Wild Rice Soup with cheese and crackers


I had some leftover brown rice from last week's Crockpot Orange Chicken and this was a great way to use that up, although I still prefer wild rice. I usually use leftover cooked chicken instead of the turkey, and I add broccoli or cauliflower as well. I love using up leftover veggies in a soup, and this is one of my son's favorites, even without any meat in it.


Monday Lorraine's Spaghetti Sauce with Caesar salad and garlic bread


This is just a classic, all around good spaghetti sauce, equally yummy over zucchini noodles or spaghetti noodles. I added some extra tomato sauce to make it moist enough to puree for Dad, but it was tasty and made a pot large enough to share with unexpected, but most welcome, company for supper. Love when that happens!



Tuesday 15-Minute Mediterranean Fish Dish with green salad and wild rice


This recipe comes from the "Yum & Yummer" cookbook by Greta Podleski. This was the second time I've made this recipe, and both times I've thought it was fantastic. I love that it's another spin on fish, and you can easily substitute your family's favourite kind for the cod or haddock. We always use frozen sole because it is such a mild fish and is consistently tender and not dry. Dad is able to eat it just by mashing it.


I baked the fish (first drizzled with melted butter and lemon juice) at 450 F until done, rather than frying it as the recipe suggests, but the first time I made this recipe I fried it and it was great, too.


This was a huge hit with my dad. Initially, he was not excited about the bruschetta topping until he saw Mom eating it, and then he wanted some, too. Dad wrote, "Very nice supper. Mom pureed the salsa - great flavour." (Salsa, bruschetta, close enough!! lol)



Wednesday Slow Cooker or Instant Pot Greek Chicken with roasted potatoes and green salad


This was another flavour departure for our family, but I thought it sounded tasty so we gave it a try. And guess what? It totally delivered! Dad ate a big bowl and it was really flavourful.

Friday Steak with baked potatoes, Killer Topping for Baked Potatoes and broccoli

It has been way too long since we had steak around here. There's just nothing like a good steak served alongside a baked potato. My favourite steak is a tenderloin. We don't have a barbecue, (don't judge!), so I actually bake steak in the oven and it turns out perfectly every time. You can check out these instructions: How to Cook a Perfect Steak Indoors . I like to season the steaks with some Keg Steak Spice. I also love a great baked potato, and this topping is indeed "killer"! lol




You might already have a cherished chicken noodle soup recipe, but if you don't, this is a good one. I often use rotisserie chicken or leftover chicken instead of cooking fresh chicken breast. I also like to add some frozen green peas at the end for colour and/or frozen corn.
