Another week where my slow cooker got quite a workout. For some reason, I used to feel like things that I made in it all tasted the same somehow... No longer! There are some truly fantastic slow cooker recipes out there, and a couple of them were on the menu last week. The other recipes I'm sharing are also quick and easy.

Sunday Overnight Oven French Toast and Bacon Quiche Tarts along with fruit salad and breakfast sausage
We continued with the Christmas brunch theme today since there were still leftovers from yesterday. I love potlucks - there is NEVER a shortage of food, and always tons of leftovers. I haven't made Overnight Oven French Toast in a long time, but it was just as good as I remembered. It's so nice to have something ready that you can just pop in the oven at the last minute, and it's meatless for those who prefer that. The Bacon Quiche Tarts are something my son requests frequently, and they were on his "must have" list for yesterday. I never put the green pepper in, as we aren't really fans. These can be microwaved to warm them up - they only need about 30 seconds. I made two batches, one with bacon, and one without. Both were equally delicious.
Monday Crockpot Pot Roast with green peas
My son does not like pot roast, but once in a while I decide to give it a try again. This was one of those times. This is a good recipe if you like pot roast.
Tuesday Slow Cooker Cordon Bleu Chicken with broccoli and wild rice mix
The linked recipe isn't exactly what I made but I don't have permission to share the real one (Clubhouse Chicken from "300 Slow Cooker Favorites" by Donna-Marie Pye). If you want to try it out, you'll have to buy her cookbook. :) This recipe is close, though. Basically I took 8 chicken thighs and used a mallet to flatten them. Then I spread them with Dijon mustard and topped them with a slice of ham and a slice of Swiss cheese. I rolled them up and used a toothpick to hold them closed. Then I placed them in the bottom of the slow cooker, sprinkled them with thyme and paprika and poured a can of Campbell's Cream of Mushroom Soup (the lower sodium kind) mixed with 1/2 can or so of evaporated milk over top. They were cooked on low for 5-6 hours and were really tasty! Dad wrote, "Chicken very well done - didn't need to be pureed. Added extra gravy as I went along. Very nice. Nice enough for Christmas!" Now that's saying a lot!

Wednesday Bolognese sauce with spaghetti and green salad
My son adores pasta, and Bolognese is definitely one of his favourite sauces. Up until now, I hadn't really found one that he loves, but this one is superb. Don't leave out the pancetta or the butter or cream. Simply yummy. This can also be made in the slow cooker, although I didn't use mine today.

Thursday Sheet Pan Garlic Butter Tilapia with Crispy Potatoes and steamed broccoli
Personally, I don't really care for tilapia, so I substituted sole in this recipe. I didn't have any asparagus either, so we had broccoli which I steamed instead of baking. The fish was almost poached (I cooked it from frozen), and mild and tender. The Crispy Potatoes were such a hit last time I made them and I thought they would go well with the fish and tomatoes, so I served them again. Dad wrote, "Delicious flavour. Ate everything without the need to puree. The butter garlic sauce was special. None left over." Dad has been struggling with appetite lately, so I'm so glad to know that this was a success.

Saturday Cheeseburger Soup and Quick Cheese Biscuits
Winter is definitely here to stay, and I just love soup when it's cold outside. My friend, Jami, recently served this to a big group of people as part of a work event, and it was a huge hit. I don't cook with Velveeta ever, but it was on sale and I thought I'd give it a try. This soup was very cheesy and good. Next time, I would omit the basil just because I didn't love the flavour and found it a bit overpowering. Or you could probably just use less of it. Dad and Mom really enjoyed it and it didn't need to be pureed for Dad to eat - always a bonus!
