
Salisbury steak, buttermilk pancakes, roasted veggies with halloumi, pizza-stuffed chicken roll ups and quinoa vegetable soup
This was a very difficult and stressful week for our family, and we had a lot of visitors as well. We have really appreciated all of the support and love and prayers. By the end of the week, we were relying on leftovers and takeout, and I was grateful for those, too!
As usual, there are a couple of new recipes in the meal plan. I was very happy with how our meals turned out this week. Everything was really tasty and easy to prepare.

Sunday Skillet Salisbury Steak with green beans and Ultra Crispy Baked Potato Wedges
This recipe was a nice change from the usual ground beef meals we make and bonus - I already had everything I needed for it. I have seen Salisbury Steak recipes using just onions, but I like the variety that adding mushrooms gives. The "steaks" were yummy and the potato wedges paired very well with them. I used ground beef patties from Trick's Creek Farm as always. Mom was just telling me the other night that she basically doesn't want to eat beef from anywhere else anymore! We wholeheartedly agree.

Tuesday The Ultimate Buttermilk Pancakes with bacon and fruit salad
Since it was Shrove Tuesday, I had to make pancakes tonight. I had a little trouble finding any sausage when I was shopping, so I served bacon instead. I guess that shouldn't have been surprising since I imagine a lot of families were making pancakes tonight! I've mentioned before that I always serve pancakes with a side of fruit salad. This time I used mango, banana, green grapes, oranges and kiwi. So good! I made two batches of pancakes since my son had a friend over for supper - one was plain and the other was blueberry. Love those with pure maple syrup.
Wednesday Halloumi and Mediterranean veg traybake with Naan bread and hummus
I really loved this, although 400 F was needed to cook things in the time suggested in the recipe (and depending on how you like your veggies, more time may be needed). Cutting the zucchini into smaller chunks might have shortened the cooking time as well. I used the broiler at the end, just to turn the cheese golden. I warmed our Naan bread at the same temperature (400 F) for about 5 minutes, after first sprinkling the tops with a little water. Hummus was the perfect accompaniment. This was super good.
Thursday Pizza-Stuffed Chicken Roll Ups with Creamy Garlic Shells and broccoli
We really love this chicken dish. Tonight I managed to make the roll ups (last time I just left the chicken breasts flat) and they were easy to make. They warm up very well and are so tasty! They're from Gina Homolka's "Skinnytaste Fast and Slow" cookbook, and I love how easy they are to customize - just change or omit any toppings or fillings your family doesn't like. The pasta side dish was also really good and simple to make. This meal was a great combination of flavours your whole family will enjoy!
Friday Quinoa Vegetable Soup with cheese buns
I froze this soup last week when I made it, and it warmed up very well. Ideally, I would have thawed it before reheating, but I didn't think that far ahead today. This was just as good today, although I would recommend that you be careful when stirring as the beans will break apart.
