I wanted to give a shout out to my amazing friend and fellow cook, Jami, who requested that I share my weekly meal plan. I love this idea, and hopefully it inspires you as you plan meals for yourself and your family.
Meal Planning
Meal planning is a great way to make your life easier. Having a plan for what you serve each day means less waste (hopefully!), less stress, and less temptation to make unhealthy choices (like fast food takeout!)
Personally I love meal planning – both doing my own, and checking out someone else’s. I often keep a list of recipes I want to try and just pull from that as the mood strikes me. I also usually have a giant pile of printed recipes sitting on my counter that I have either tried recently, or want to. There are often a few magazines stuck in there, too.
I find looking at someone else's meal plan very inspiring. I love trying new recipes, so I'm always game to give that a go. And sometimes a recipe they suggest reminds me of something I used to make that I want to try again.
I am a big fan of using things I already have on hand, as well as hopefully buying less that goes to waste since I actually have a plan for it. I freely admit that I sometimes purchase on a whim, and that usually ends badly… (Goodbye, black kale, round #3! I had big plans for you, but since Dad can’t eat greens, sadly, you never made it to the actual meal plan. One day, I promise…)
Full disclosure – although I make a meal plan every week, it tends to be a bit fluid… Sometimes plans change, or I just don’t feel like making that (I admit, I often cook based on what I feel like!), or we have more leftovers than expected or sometimes fewer, it all depends… lol
My meal planning revolves primarily around dinner. I tend to eat the same thing every day for breakfast during the week - usually some sort of baked oatmeal cup, Greek yogurt and fruit, or just yogurt and fruit. On weekends I always eat eggs, bacon, toast and veggies, often in the form of an omelette. Lunches during the week are often eggs or leftovers for me and leftovers for my son.

Jami shared this recipe with me and it is fantastic! She tried it with pork tenderloin instead of pork chops and so did I. I also substituted white vermouth for the white wine.
Saturday: eat out/takeout
Verdict
This was a good week for food, I thought. I felt like we ate really well and everything was delicious. We didn't have any wasted leftovers, which always makes me happy. Dad and the boy enjoyed everything, too, so that always makes a plan a winner.
