I just can't get enough of summer this year. Loving the lake and the beautiful skies every evening. I want to soak it all in! Therefore, this week's meals are super summery and simple.

Sunday Hamburgers with Big Mac Salad
I may have mentioned we are really loving our fire pit this summer. Sunday was an easy day with a walk along Lake Huron and burgers cooked over an open fire. As a side, I served this Big Mac Salad minus the grouind beef. Still good!
Monday Honey garlic sausage with new potatoes and yellow beans
We've been taking advantage of all the fresh (and local) summer produce in our area, and really enjoyed this easy stove-top meal. My grandmother always boiled yellow beans with a small onion, quartered. I'm not sure why, and I don't eat the onion, but I can't seem to cook yellow beans without it! There is nothing like a new potato with butter, salt and pepper, either.

I'm enjoying my final week of summer holidays, so we took a little road trip today and ate out - Cora for breakfast and Tien Lee for supper. Can't beat it!
Wednesday Steak with Killer Baked Potato Topping, new potatoes, sauteed mushrooms and steamed broccoli
I bought our tenderloin steaks at Costco and they were primo! Apparently I can't get enough of those new potatoes either. Usually I roast them to serve with my Killer Baked Potato Topping but tonight they were boiled, and the topping was still amazing.
Thursday Fresh corn on the cob with summer sausage, sliced tomatoes and Awesome Potato Salad
When I was a little girl, my parents worked in Guelph and passed by a little farm every day that sold fresh picked corn on the cob in season. My dad loves corn on the cob, so whenever my mom would ask what we should have for supper, it got his vote. I swear, it felt like we had summer sausage, corn on the cob and Stone Crock potato salad nearly every night during corn season (and I think we might have!) My brother and I quickly tired of corn, but my dad never did.
These days I make my own potato salad, and this is one I've been making since the 90's. I skip the tomato slices and the second amounts of milk and mayo. I also add 1 tsp of regular mustard and 1 tsp of sugar to the dressing. I found this recipe in "Company's Coming - Barbecues" cookbook, but since I don't have permission to share that one, this is as close as I could get. Potato salad is one of those things that I make a few different versions of, but this one is always good and I always go back to it at least once each summer. I know some people argue that potato salad tastes better the second day, but I'm not 100% sold on that idea, at least with this one. It is definitely best well-chilled, but I find that the onion gets strong on day two, and I'm not always fond of that. Regardless, this is an "awesome" potato salad recipe, and one I'm happy to share with you. I know some people like to add in radishes or pickles, and you can do that, too. Personally though, I am a "basics" kind of girl - celery, onion, and hardboiled eggs topped with paprika.
There is also a debate about whether mayonnaise (Hellman's) or salad dressing (Miracle Whip) is better. Miracle Whip is sweeter and tangier than mayonnaise. Did you know that salad dressing was developed during the Depression when most people couldn't afford mayo? It has more sugar, vinegar and water, and fewer egg yolks so it was cheaper to produce. I have tried both, and I'm not sure which side I'm on, but I do know that this potato salad is always good no matter which you use.
I still had some homemade pizza sauce and all of the required ingredients for these awesome pizzas, so I made them again. I'm feeling a bit lazy this week when it comes to cooking...
Saturday Hummus, Olive & Tomato
This meal seriously takes 5 minutes to make, and is yummy! It's from the "Flat Belly Diet" found in Prevention Magazine. We went to Costco this week and ended up with two containers of hummus and a giant pack of English muffins, so this was the perfect meal to use some of those up. (It's never a good idea to go to Costco when you're hungry and they're serving samples, especially with a teenage boy!) Mom says this is her favourite way to eat hummus.
