Cozy Cottage Meal Plan Week 41 - 2019

Sausage & leek soup, beef & quinoa meatloaf, seared pork chops with twice baked potatoes, chicken noodle soup.

We went hiking yesterday as part of a "Fall Colour Tour" but I feel like the leaves are late changing this year. There are a few red maples, but still a lot of green. Fall is one of my favourite seasons whether the leaves have changed or not, and yesterday was just a beautiful day.





On the menu October 6 - 12, 2019:



I may have mentioned that I love soup, and you will likely find it on my menu at least once a week throughout the fall and winter. This recipe is one I tend to make over and over. It's excellent and different from your usual leek and potato soup. I'm sure the butter makes it better! Everyone I've served this to loves it. We prefer the veggies and sausage finely diced, but they are good chopped as well.

Tuesday Beef & Quinoa Meatloaf with mashed potatoes and stir-fried veggies


I always joke with my son's friends (or any other company we have) that they are "guinea pigs" as I frequently test out new recipes on them. Tonight was no exception. We had 3 teenage boys as last-minute guests and they said supper was good. My son doesn't like meatloaf at all typically, so he begged off giving me his opinion.

I thought this meatloaf was good but it definitely needed additional barbecue sauce when served, and the quinoa gave it quite a firm texture. It could also have used some salt, as could my mashed potatoes! As my son tells me, my kitchen failures are thankfully not very frequent, but this one was close. I did like cooking the meatloaf on a broiler pan instead of in a loaf pan since it was way less greasy. We've decided that we very much prefer this week's recipe for mini BBQ Cheddar Meatloaves, so I'll be sticking to that one when I serve meatloaf again. This is only the second recipe from "Yum & Yummer" that we haven't loved so I think that's a pretty great track record! Still currently my favourite cookbook...

Wednesday Seared Pork Chops with Twice Baked Potatoes


Sadly I can't seem to find a link to these amazing pork chops from Good Food but I did find this one which looks equally good. I have mentioned before that my son kind of hates pork unless it's ham or bacon, but he insisted that this was the first time he actually loved it. (He also cooked the chops and did a fantastic job!) This meal was a winner with all of us - just delicious. The potatoes were really yummy. They were cooked in the microwave and then finished off in the oven, so they couldn't have been faster. The topping was Greek yogurt, and it was delicious. Greek yogurt and butter along with a spice mix were used for the filling as well, and it was topped off with some white cheddar cheese. Yum! So far we have loved every meal we have purchased from this meal delivery service.

I've been suffering most of the week with a bad cold, but today was brutal. I really didn't feel like doing much of anything, especially not cooking, but thankfully this recipe comes together quickly. And honestly, nothing else appealed for supper! I had to improvise a bit since I was out of celery and only had a frozen chicken breast, but it's hard to screw this one up. I poached the whole chicken breast in chicken broth until it was thawed enough for me to dice it while I cooked the onions, carrots, and garlic in a separate pan until they were soft. Then I added them to the chicken and broth along with the noodles. I also like to add frozen peas and I used up the last of a bag of frozen green beans as well which made me happy.
